Is the Video/Audio cables used on the NES just standard cables or did they come with propriety cables?

The composite cables? They're standard.
Standard cables will work but the cables that were originally included with NES systems had a yellow and red ends to match the output jacks on the side of the NES. Most composite video and mono audio cables are yellow and white.
Playing around with some of my hardware at home, when plugging mono audio into the white input jack on my TV or VCR, audio would come out of both speakers. When plugging into the red audio input port, sound would only emit from the right speaker.
It makes the red color coding for NES audio seem like an odd choice. Generally, I run the NES through an AV switchbox and use an RCA Y-splitter to get audio out of both spekers on my TV.
