A friend and I were talking about how Disgaea could make an interesting fighting game. You've already got a large cast of characters and special attacks, seems easy to go from there.
Even though I hated SF4 when it first came out, playing HD Remix helped me get in the state of mind needed to try again, so I've been playing alot of SSF4 for the past couple of months.
Right now its WWE Allstars all the way!! What a fantastic game!! but maybe after next week it will be the new Mortal Kombat.
Tekken 6 never grabbed me, Soul Calibur 4 was pretty good, really liked DOA 4, Super Street Fighter 4 is rather good if a little too familiar and Marvel VS Capcom 3...its just meh...really meh.

Yeah, DOA 4 for me too, despite its stupid velociraptors, cheetahs, and LOGS! Also enjoyed Tatsunoko vs. Capcom (nearly as much as MVC3, which is kinda sad really). If I could have a dream release, it would be Tobal 3.
Or a reboot of Battle Arena Toshinden by a competent developer, like Project Soul or something.
Right now my top fighting game would be MvC3, if only because it's the only one I play online a significant (i.e. non-zero) amount, despite the 'Dante/Dante/Dante' ethos every team seems to be trying to adopt. SSF4 would probably be second on the list... and both games are obviously PS3-based for me. I've just picked up Continuum Shift cheap (£15) so I'll be banging away at that the next couple of weeks.
As for my 'fantasy' fighting game... either Virtua Fighter 6 or Eternal Champions 3. Call me a Sega fanboy if you will, I'll just take it as a compliment.
Super Street Fighter 4 and Marvel Vs. Capcom 3 are my current favorites, and I'm very much looking forward to the Mortal Kombat re-boot from what I've played.
As far as what I'd like to see, I think that Street Fighter Vs. Larry Flynt would be a good entry into the Vs. series.

I'd love to see characters from Virtua Fighter, Fighting Vipers, Tekken, and Dead or Alive mix it up. I did not include Street Fighter due to its more fantasy, projectile based fighting styles.
Tekken 6 and Soul Calibur 4 are my current favs. I have DOA4 and Dragon Ball Z: Burst Limit but still haven't played either yet. I'm most looking forward to Tekken Tag Tournament 2.

I suppose I was imagining (basically) Soulcalibur with B.A.T. characters and awesome cheesy B.A.T. music. Pretty sure I'm alone in this desire though, that's why it's my fantasy choice!
I totally forgot to mention Final Fantasy Dissidia, which I've spent over 80 hours on so far. Kind of an RPG fighter, weird hybrid, but totally addictive. I want a PS3 version of this, too.
I'm enjoying the hell out of Marvel vs Capcom 3 right now, as it's the hot game right now. However, Super Street Fighter IV is the best game right now in terms of balance. You don't lose the game at the character selection screen; pretty much every character has a fighting chance, and it really depends on the player. Unlike Marvel 3 where anyone can just X-Factor Dark Phoenix and go to town. I know I know, snap her in...but it can be trouble some to get rid of regular Phoenix when all they do is stay in the air and shoot homing fireballs. Ugh, stupid character.
I do look forward to the new Mortal Kombat game, though. Street Fighter x Tekken looks really great too.
Game I'd like to see? I'd love to see a Capcom vs SNK 3. Loved CvS2.
(Edit: After seeing kupo's post, I agree that Virtua Fighter 5 is one hell of a fighting game. Definitely not for the feint of heart, it has one hell of a learning curve. I do love that every character is incredibly unique though. So much detail.)

Virtua Fighter 5 and Dead or Alive 4.
Virtua Fighter 5 is the more technical game so you need to be more skilled at it to be good while Dead or Alive is more noob friendly. Virtua Fighter 5 is the best, but I'm only good with a few characters while I'm good with just about all the characters on DoA4. Atleast when it comes to being a little bit more than a casual fighting game fan rather than someone who is really dedicated to the games.
I own Blazblue Continuum Shift but have yet to play it or the original.
I love me some Street Fighter IV. I don't get the haters. AE was just announced for console, and even though they utterly ruined my main, I'm still excited. I'll just play Yang instead.
The game I'd like to see is the new Melty Blood Current Code that's been tested in arcades recently. Port that to PS3, and I'll import it in five seconds flat.
Blazblue good fighting system I like the way it plays. Also I like the King of fighters 12 the new animation looks great and the fighting is excellent.
I would love to see a new last blade man that game was awesome.

I mostly play SSF4 and MvC3, but I like DOA, VF, and Soul Calibur games too.
I'd love to see a new Techromancer, Last Bronx, Tobal, or Power Stone.
MvC3 and KOF 02:UM are my favorites of this gen. KOF 13 too but that doesn't really matter until a console release.
And don't bring up that stupid girlie Aladdin rip off! Shantea?
