This one's hard, so many really good Midway games.
I'll go with Pacman Jr.
the mazes felt so big with that scrolling screen, it just made a really fun pacman style game.
i loved Omega Race too, that would be 2nd choice..

Baby Pac-Man definitely. Challenging, very enjoyable game that required a lot of strategy and skill.
My arcade gameplay videos:
Atari Gravitar fully completed
Atari Star Wars Longplay
Atari Battle Zone Longplay
Atari Space Duel Longplay
The machine I dumped all of my allowance money into for years...
TRON (1982)
Bally Midway's best games were their own. I love Gorf, Satan's Hollow, Tapper, Mr. Domino Man, Timber, Wizard of Wor, and many others.
Pac-Man by default. It's the game that got me hooked on video gaming in general.
But my runners up would be Jr. Pac-Man, Wizard Of Wor, or Xenophobe.
Spy Hunter. I used to tear that game up big time. I know I could throw a vote to Pac-Man or Ms Pac-Man but despite them publishing it, it's a NAMCO game. Also if you have a buddy or two to do it, Rampage was serious quarter eating fun back in the day too sticking to arcade games.
Pinball is a whole other matter and I'd have to think about that as you didn't throw William's on there which is them too.
