2 coin-ops that I recall spending a large amount of money in one sitting were Galaga and Xybots. At least $20.00 each and Galaga took me for at least a C-note over time.
we have a tiny arcade here called "the wonder zone" where you pay 2 bucks and the machines cost 5 cents each so its harder to get to the high money amounts, but i've spent about 30 bucks in one night in nickels, between about 4 machines. simpsons, pole position, tekken, and some star trek style game that i can't remember the name of.
Ok, on three occasions when i was young, i spent an entire roll of quarters on one game.
The first was Super Off Road on my 5th grade family vacation to Circus Circus in Reno.
The secend and third are near the same time line (8th gradish?)
X-men, and that Dungeons and Dragons game...both sidescrolling fighters im sure you know the ones.
Anyways, those games all rock, and if i could have on coin op machine in my house, i think my first chioce would still be that big ass X-men game
I'm with omnedon. The Double Dragon games used to eat up alot of quaters when me and my friends would play till the end.

I think i spent about $ 10 to finish Captain Commando when i was a child and i remember one time when i was with four boys playing Sunsetriders and we opened the box where you put the coins and we moved a little stick when we are out of credits, i think we put 250 credits and finish the game.
Then i played a lot to "The house of the dead" and i really donīt know how much money i spent on it :/
SF2 had just come out in the arcades. One of the greatest arcades in London called Las Vegas had 7 credits for Ģ1 on their machines. So I spent hours and hours, days and days playing this thing single, but mainly two player against strangers and mates. God knows how much money I've put into the machine over the years...
i spent $20.00 in quarters playing The simpsons arcade game.
For me probably trying to beat Die Hard Arcade with this kid at a bowling alley during one my father's tournaments or playing The Simpsons arcade down in Wildwood.

Id say Soul Caliber 2 , after we managed to unlock the conquest mode oh man there were lines and lines i spend hours and hours and 5 dollar bills like it was nothin, lol.
$10 multiple times in Terra Cresta or Mat Mania.
aroung 8-9-10 I remember one time starting out with $10, the Donald Ducks(Chicago Irving and Kedsie?) that had these games never had change, or so they say. So i went to the Currency exchange and got a roll of quarters, but the problems is that it cost 15 cents, so i had to open the roll to get a quarter out to pay them.
So what do i do when i walk out the door, drop the damn roll. Quarters roll everywhere. and i was picking them up, som went under the suntimes and tribune box, stuck my hand under there and, Whats this? A big ole bag of weed. drugs are bad, i knew it, i was scared that they'd get my fingerprints off of it if the police found it. so i stuffed it in my pocket, my friend sees me, what am i doing, i show him and he said lets take it to my mom. We take it there, she can't believe it, and takes it and goes the the warshroom and "flushes it"
That night i remember she was smoking her funny smelling cigs. took me a few years to figure that one out. went back the next day and ended up blwoing at least the left over quarters on one of those games.
My life and perception has changed, but my principals are the same.
today-DDR takes up $20 to $30 dollars of my paycheck. (have to drive an hour to the nearest DDR machine, so i better damn well get my money's worth). Police 911 eats my tokens now too.
yesterday- (1999 and below) virtua fighter 2 ate many quarters, so did the galaga and pac man at the laundrymat. slient scope was a good one. finally was able to beat it w/ one dollar. golden axe was another one. and pinball machines.

I'm ashamed to admit it, but I've put down well over $100 into the NBA Hangtime/NFL Blitz machine at the arcade at my university's Student Union (over a two year span). Played and beat all of the NBA teams, as well as the NFL teams. But I own nearly all of the records, including consecutive wins in the NBA game. Not to mention scoring 150 pts with Vince Carter in one game. He was "on fire."

I think th emost I spent in *one* itting was $10 on Space Harrier in '88 Back then i didn't even have the SMS game yet.
Nowdays... well... I can't remember the last time I spent a quarter as many of the arcade games mostly sucked and I don't want to shell out over a dollar just for 30 seconds of game time.
Another day, another dollar... wake me when it's payday.

The most I fed one machine in one sitting would be at least $10 on Mortal Kombat II.
But at least I beat it.
From my experience i'd say that the game I COULD have sunk the most quarters into would be Terminator 2.
I remember puttin in around 2 or 3 dollars sometimes and still not getting past the Human Hideout Level.

the only games i've spent more than $5 in one sitting (but probably no more than 6) are total carnage and SFII: championship edition when they came out.
I spent a good $10 - $15 worth of quarters while playing through Teenage Mutant Ninja Turtles back in the day. Thank God for MAME!
I have spent $20 EASY on Teenage Mutant Ninja Turtles: The Arcade Game in one sitting. (Good thing it came out for the NES not long after!)
