Really, though, it depends on the game for me. Some play better with a stick, some with a pad, and nothing I have plays well with the "sensor" pad or "tilting-mercury-switch" controllers that I own.

Cripes, I'm messed up in the head. It took me a good 15 seconds to realize that by 'stick' and 'pad' you weren't referring to feminine hygiene products.
Anyway, now that I've cleared that up, I usually prefer a pad. I can execute maneuvers more quickly.
Use a joystick for fighting games; joypad for everything else.
Uh, you aren't really talking about feminine hygeine products, are you? You're supposed to only talk about that during tennis matches with yer mom.

However
Being brought up on the 2600 I got used to using joysticks of course, then when I got my SMS, I had the two pads that came with it AND the joystick. The pads I COULD not use for the life of me. But the joystick I could work like magic.
Then when I got my Sega Genesis, I STILL was not used to using pads, and since the only game I had was Sonic The Hedgehog, I just kept using my SMS Joystick, cause you only needed the one button anyway.
But then I got my second game (DecapAttack) and I HAD to get used to the D-Button controller.
But to this day I STILL can't use the SMS D-Pad, and after getting used to the slim 6 button sega genesis controller I can't quite use the hulking 3 button controller anymore.

The PS2 analog sticks are positioned too awkwardly for my miniscule hands. Maybe I should look into smaller 3rd party alternatives. If only the Genesis' special small sized 6 button controller could be updated with some analog sticks. Those are the best digital gamepads ever.
As analog thumb sticks vary per system, I'll just count that out of this comparison.
For me, joypads all the way. Sure, I grew up with the Atari 2600 stick, a CoCo stick (analog even!) and a TI 99/4A pair of sticks and compared everything else to those but once I gripped onto a NES pad there was no going back. I tried to use a NES Advantage but it didn't feel right.
Davidbrit, I agree. I too have small hands and it's uncomfortable to use the PS/PS2 thumbsticks for a period of time.
I scorned the NES and the SNES back in the day. I let my PSX sit for months when I first received it as a gift.
Why?
BECAUSE D-PADS SUCK.
Well, I've gotten used to them now, and I recognize that they really are the way to go for handhelds. In fact, wasn't the D-cross first used on a handheld, before Nintendo adopted it for the NES? Anyway, long ago, I swore alliegance to the stick of the united games of Atari. And to the crisp control for which it stands, one or two buttons, easy diagonals, no blistered thumbs, with four microswitches and all.
So these days I can use a D-pad, but I'll still use a stick wherever possible. Especially for the Playstations, whose segmented D-pads SUCK (i.e., blister city). I mean, you people that play fighting games with a standard Playstation D-pad must have thumbs of iron. If an older game REQUIRES the D-pad--i.e., is not dual shock compatible--I'll use either an ALPS controller or a MadCatz controller. The MadCatz dual force controllers are neat because if you use them in "non-analog" mode, then the sticks still function in a digital mode (as opposed to becoming completely non-functional like the Dual Shock sticks do). The advantage in a D-pad control is small size for portability and ability to play while reclined on a couch.
The dual shock double-stick arrangement is a good good thing, though. For one, ROBOTRON 2084. For another, [heresy] it frees me from the tyranny of the keyboard and mouse. You heard right. When in the course of human events it becomes necessary to sever the bonds between crappy keyboards and mice and FPS games...[/heresy]
