Looking for what the title says: GC games for a sweet 6 year old. She likes Animal Crossing, if someone is there to help her with reading and harder stuff.
Hello Kitty Roller Rescue has been tried, but it was apparently a little too.. action oriented to her tastes.
So I'm looking for suggestions, and interested in buying or trading said titles.

Luigi's Mansion and Mario Kart Double Dash are the titles that spring to mind. If you can find the Mario Parties at a reasonable price, they might be good too. The only caveat is that I don't know how difficult they would be for a 6 year old.

Luigi's Mansion may be a little too daunting for a six year old. Who knows these days though... they're getting smarter and smarter.
I'd suggest maybe Kirby's Air ride?
Perhaps a little Monkey Ball 1 or 2?
Maybe the Pikmin series
Probably any of the Mario sports/party titles
Mickey's Magical Mirror?
Movie/Nickelodeon/Disney games
I forget all the games my nephew used to play around that age.. but there were quite a lot he could understand and play.

Kirby's Air Ride would be a great choice. One button play control, IIRC.

Harvest Moon might be worth a look.

Spongebob Squarepants: Revenge of the Frying Dutchman
Casper: Spirit Dimensions - Be careful here, the control setup may not be her cup of tea.
Rugrats: Royal Ransom
Donald Duck Goin Quackers - The N64 version is totally average but from what i hear the Gamecube and PS2 versions are drastically different and for a six year old it should do the trick.

You can also look in to getting a Gamecube player for her if you do not already have one. This will expand your options greatly...I'm sure there are 100's of great GB/GBC/GBA games suitable for a 6 year old there too.

Super Monkey Ball for sure.

Resident Evil 4.
Joking.
You shouldn't really have trouble finding games for a 6 year old kid, male or female... Remember, Nintendo's systems are a dumping ground for Disney, Nickelodeon, and Cartoon Network games.
And any game with Mario or the Nintendo gang should be okay. (Except Super Smash Bros. Melee)

How about:
The SpongeBob SquarePants Movie
The Haunted Mansion
Disney's Winnie the Pooh's Rumbly Tumbly Adventure
They have received positive reviews.

Mario Party 7
Super Smash Bros. Melee (if you don't mind some cartoon violence. It has the best handicapping system, and it auto-adjusts. Set right, my 5-year-old can beat me)

GameCube games for a six year old girl? Hmm, how about the whole library.
^ joking
How about these people recommending shitty games just because they have the word "Disney" in them stop doing that? I know when I was 6 I would've been pissed if my parents bought me a shitty game just because it said "Disney" in the title.
I'd recommend any first party Nintendo title. Metroid Prime might be a little complex, however.

Hmm, last I checked, Eternal Darkness is considered to be a first party Nintendo title (not developped by them, but published by them). Somehow, I don't think it'd be appropriate to suggest that game to a child... And Metroid Prime would NOT be a good choice for a 6-year-old, and it's not the complexity.
BTW, not every Disney game sucks (granted I haven't played any recent title and maybe they would indeed not be interesting to anyone past grade school). However... how about the late 80s/early 90s Disney games, mostly made by Capcom and Sony (Aladdin for Genesis, Darkwing Duck for NES, Mickey Castle of Illusion for SMS and Genesis, Chip and Dale Rescue Rangers for NES, Mickey Mania for SNES, Genesis and Sega CD...)? Last I checked, these were all great games.

This thread is about GameCube games, though. Disney games do suck these days.
Eternal Darkness is not a first party game. A first party game is something developed and published by Nintendo, or one of their franchises specifically contracted out and developed in close collaboration with Nintendo.

I have a nephew who is 7, and here are some of the games he loves to play on the Cube.
Kirby’s Air RIde
Road Trip (Great driving game for kids)
Tak: The Great JuJu Challenge
Pokemon Channel
Mario Kart: Double Dash
Mario Tennis
Mario Golf
Mario Baseball
Mario Strikers
Sonic Adventures Director’s cut
Sonic Adventures II
Monkey Ball I & II (These are really tough, they maybe a little too frustrating)
Plus, he brings a lot of franchise games over to my house. Stuff like Madagascar, or Over The Hedge, these might make excellent choices as well.

Wouldn't Eternal Darkness fall into the latter category?

Developed by Silicon Knights, published by Nintendo, only on the Cube...

They may suck to you these days (have you tried them all?) but then again you're not a six year old girl (unless you are).
People can ramble off all the Disney titles they want, we're giving him choices.
Maybe they do suck, maybe the controls are broken beyond repair, but maybe she just wants to control her favorite character around the screen and jump into walls. Who knows.
Here is a nice list of Disney games. I am unaware of their "suckage" factor, so maybe Xizer can rate them all for you.

Dude, I watch LazyTown. A show for preschoolers.
I think I am qualified on this subject. http://www.getlazy.net/forums/images/smilies/emot-crossarms.gif
BTW here's what I'd rate them just by glancing at them
Extreme Skate Adventure - this one was actually decent IIRC
Party - ok
Sports Football - shit
Sports Skateboarding - meh
PK: Out of the Shadows - dunno
Sports Soccer - shit
Sports Basketball - shit
Meet The Robinsons - shit
Chicken Little - ok

Sports games are fail. Also, all mediocre titles, nothing even manages to hit an 8.0, with only two managing in the 7s. Also, Game Rankings is far more reliable.
