I'm looking for a book that teaches you how arcade machines work, and maybe even shows how to restore/fix and even build them. Is there a complete A-Z book out there on arcade machines?

i cant help but thinking that i saw a book along these lines when i was researching mame cabinets but i cant seem to find it within 5 minutes of googling.

There is Project Arcade, which is just a good starter book for building a MAME cab. This doesn't really teach restoration, or what parts of a real arcade are and how they function.

While not in paper form, pinrepair.com is pretty much the end-all be-all of Pinball repair/resto resources.

Awesome, thank you, we have an old pinball machine in the house that features a gate that always breaks. I wanted to learn how to repair the thing, I'll check it out.
