OK, time to get this started for the classic discussions forum. Let's start building a list that others can use as a guide - even if your suggestions don't make the list, at least your suggestions get seen! These threads should be especially handy to people who got their systems recently and want to start out with the "A List" of games to pick from.

Lumines
Every Extended Extra
Gurumin*
Gradius Collection
PoPoLoCrois

Lumines has to be on the list! I have not played a more addictive puzzle game since Tetris on the Game Boy. This game lives in my PSP.

Sega Genesis Collecion

I especially enjoyed the Midway collection ... and while all of the Midway Arcade Treasures collections have suffered from pretty sub-par emulation, the PSP edition (while also suffering from some of it's own) has some of the best emulated versions of the games on it IMO.

The best use of the PSP's analog/button control scheme in an FPS game (very Goldeneye64-esque), and some of the best online multiplayer (32 player matches) on the handheld.

I'm adding

SNK Classics Volume 1

to the lsit of classic collection love on the PSP

Everything looks and plays great (possibly a touch better than the PS2 version, but everybody knows the PSP has better emulation resources) and the fighting games like King of Fighters and Samurai Shodown have GREAT fireball-move responsiveness on the D-pad and Analog Nub.

Took me awhile to get all 4 of these, but these games get the most playtime on my PSP (Ultimate Ghosts N Goblins did, but when I beat it on normal mode, never went back to it).

I'll skip all the games that have already been listed and just some new ones that are great.

Wild ARMs XF(amazing tactical RPG.)*
Gundam Battle Universe*
Star Ocean First Departure(better than the original version.)
Star Wars Battlefront Renegade Squadron(the customize option makes it better than the original games)*
Space Invaders Extreme(classic upgraded)

I would have listed Gundam Battle Chronicle, Gundam Battle Royale, and Gundam Battle Tactics, except that Universe has everything those do and more.

If games you can buy from the Playstation 3 online store count, the PSP exclusive:

Beats

That game is awesome and addictive if you are into music. Try playing fast rock music on extreme difficulty and try not to miss if you want to have a really good time. Too bad for non-PS3 owners it's not available on a UMD.

I also recommend

X-Men Legends II: Rise of Apocalypse

if you like action RPGs or liked the console version of this game, it looks very good on PSP and doesn't seem to be missing a thing. Actually it has a few more characters added to it.
