I'm not talking about the LE, "not for resale" version, or All-Stars, but was there a version with 2 discs?

Yep, I have it. It has a Sonic Adventure 2: The Trial disc.

I wanna say it was a pack in withthe set that also came with sonic shuffle, but I could be wrong.

Right. Where there should be a barcode, it says "not for resale."

I could've sworn my copy has a barcode. I'll have to check it out.

If yours has the barcode then it doesn't have the original back to it.

I had to confirm, but the disc itself also says "not for resale."
