I have an Action Replay for the original Playstation and it allows me to read whats one the cd-rom itself. It is able to playback any .str movie files on the disc and any .xa audio as well. I was wondering, however, if there are any programs that can read the .dpk files found on PSOne discs as well as the .move files (No quicktime program I used could play them properly).....

Have you tried PSXMC (http://homepage2.nifty.com/~mkb/PsxMC/) You may need to use a machine translator. It can playback .str .xa and other image formats used in the psone.

Hell if I know. I used a program from here (http://www.zophar.net/utilities/psxutil.html) to rip some STR files from Tenchu (music), but I don't know if it'll deal with DPK files. I do remember being able to see little movies in PSMplay, I think.
