If I recall, PS/2 to USB adapter will work absolutely. Before you take the plunge I would wait to see if anyone else has had this come up.

I can tell you from experience that it does work (I owned one at one time). If I remember correctly the buttons are assigned keyboard keys but it maps out like any other controller. It's an awesome controller that has a TRUE lifetime warranty with no questions asked. I only sold mine because of room constraints but I live in a house now so I am going to buy a Tank Stick from them. Well, feel free to PM me if you need any more help on the setup:)

To MAME it will be the same controller, a keyboard is a keyboard.

I have a PS/2 version hooked up to a CPU with no PS/2 input either.
The PS/2 to USB adapter I got at Radio Shack works perfectly with my X-Arcade as long as I have a standard PS/2 keyboard plugged into the X-Arcade unit itself.
If I take the keyboard off of the X-Arcade it doesn't work correctly
You need to keep a keyboard in the PS/2 model, and I think that's a standard requirement of that version of X-Arcade.

If they don't most little computer stores will have a bucket of them. ;)
