I have a few Power Adapters for Nintendo and Sega that don't work. I was wondering are they dead or is there anyway to take them apart and replace whatever it needs to be replaced?

There is a fuse in them I believe, that prevent a direct short which would cause a fire.
Getting them apart though and fitting a new fuse? You're better off getting a new supply.
Remember, while the DC output of a Sega supply can work on an NES, NEVER use the NES's AC supply on a Sega. That's a 1 way ticket to a burn out.
NES has a rectifier in it, Sega does not..

From what I've heard it usually is just easier (time, money) to buy new one's than replace busted ones. Though, I have heard of people doing it before, so I do believe it's possible. I don't know how to diagnois though, hopefully someone here does.
edit: ^like him :)

That is good news to me, I am cleaning the room at the moment and this will give me more space in the junk bucket of systems and what not to be cleaned or fixed.
