How much should I expect to spend on one with hook-ups, two joysticks and paddle controllers?

I would say between $20 and $50 depending on 4-switch versus 6-switch, heavy versus light, woodgrain versus Vader. Could you be more specific about which model, please? And are these original CX-40 joysticks or 3rd party compatibles?
I also assume we're talking about the non-Junior types as those did not come with paddles.

I sold a 4 switch Vader with hookups, joysticks, paddles and couple games for $20 on eBay. So anywhere from $15 - $40 I'd say. But as Pantechnicon said, it depends on which model. The 6 switch models go for more than 4 switches, and the heavy sixers go for more than a light sixer.

I've been selling 4 switches around here for $50, though thats with 20 games or so.

If you're looking at controllers in the package I'd suggest keeping an eye out for SunCom's line. The Slik Stik has been my favorite 3rd party model so far, but it's always nice to hit a variety lot for the various flavors of handling gameplay.
To be more on par with the pricing though, a straight unit locally here goes for $12-20 with 2x original sticks and sometimes paddles thrown in for an extra $5. Vaders and whatnot go a bit higher, but generally haven't seen anything above $50 except in pawn shops wanting to take advantage of impulse buyers.
Several months ago I picked up a 4-switch woodgrain with 4 sticks and 2 paddles with like 14 games (basic commons like Pac-Man, Space Invaders, E.T., ect.) inside a clear, plastic case with hook-ups for under $30.
