Dreamcast - Soul Calibur
Saturn - Virtua Figher 2?
Nintendo 64 - Fighter's Destiny?
That's all I can think of....

I could swear I've heard of Fighters Destiny before. N64 didn't have any really good fighters that I've even heard of (nevermind the overall dearth of titles for the system); Mace was fun, but unbalanced, and even NP admitted that "the characters don't stay cool for long." As far as 3D fighters go, not a disgrace, but not terribly good either. They spent too much time on building in secrets. Overall...feels like a different take on Mortal Kombat.
Dreamcast...I played Soul Calibur in the arcades a few years ago and wasn't terribly impressed. That's just me, though, and I'll have to spend some time with the home versions.
Super NES...I remember playing SF2 back when it was new and being very impressed...as a kid. I liked Chun-Li. Now, though, it's becoming apparent to me that that wasn't even close to being the end-all of SNES fighters...but I know very little of the others.
Neo Geo: I'd say Last Blade 2, because I'm a fan of weapons based fighters and that artwork style. Not their best effort in terms of gameplay, but I just like it. Is that a crime?
And on the arcade bit...I say that when you designate a "best game" that you mention what type of system it's on...for example, if you're talking about GGX version 1.5 then you should do us a favor and add "Arcade: Atomiswave system" and not pretend that it's fair comparing that to, say, System 16 hardware.

C'mon, the N64's best fighting game was Super Smash Bros. by far. I'll also vote Tekken 3 for PS1.

The SNES has Street Fighter 2 Turbo, and the Genesis had Street Fighter 2 Special Champion Edition. Both were the same two games (CE and Hyper Fighting), and were pretty close ports.
The Dreamcast's best has to be Street Fighter 3: 3rd Strike. Why else would the game, having come out in 98, still have a huge following in Japan, where they still find new stuff out in it all the time? It's a deep game, and thats all there is to it.
Saturn its a tossup between SFAlpha 3 and A2.
Sega CD has Fatal Fury Special, I hear, so that has to be the one on that platform.

I agree that SF3: 3rd strike is the best fighting game for the DC.
As for the Saturn, I think you have to go with Vampire Savior, or Marvel Vs. Street Fighter.

Samurai Showdown II is the greatest Arcade fighter EVER EVER EVER. Just freaking go home after you play that, its over.
Soul Calibur is the best system fighter I have ever played
But bear in mind I totally dislike Fighting games for the most part.
Marvel Super Heroes for PSone was way fun.

Saturn: For the moment, it is between Marvel vs. Streetfighter, and X-Men vs. Streetfighter for me. And I think Marvel might have the edge ... some of the combo moves on that are just amazing! Plus, it has Spiderman! Can't comment on Vampire Saviour at the moment, but it should be on its way to me at this very moment, so might have to revise that judgement.
Megadrive: I've not seen anything on this system to rival Yu Yu Hakushu. 4 - player simultaneous fighting was revolutionary at the time. And there's not many fighters that can offer it even now! Plus it had all the Treasure madness, with some crazy special moves, and very wierd characters. In my circle of friends, we used to refer to it as the "Flying Dildo Attack" game, because one of the characters has a special move where he appears to turn into a giant dildo and then flies across the screen at the other player! @_@
PS1: My favourite is easily Soul Blade. Tekken 3 was OK. But the same thing, with swords? wow! hehe. I'm sold.

DC: Soul Calibur. Dear god, we interrupt "Halo night" now and again by breaking out the DC and having "First to 10 wins" matches.
Neo*Geo: It's a close tossup but I just love how King was used in KoF 2000. Therefore 2000 wins, as I'm King's bitch.
PS2: Guilty Gear X2, hands down the best 2d fighter I've played in a LONG time. Come up to the Hampton Beach area and take me on as Bridget. I'll show you how it feels to lose to a 14-year old wearing a nun outfit.
SNES: I'll be the lone guy yelling for Super Street Fighter 2 here. I know, it's nowhere near as fast but I love this game to death.

I think this should have been split into two categories. That is, Best 2D fighters and Best 3D fighters.
I consider them two vastly different genres and they should never be classed together. I think purists would agree?
I know some systems don't have 3D fighters (SNES, Mega Drive/Genesis), but everything from the Saturn onwards has a 3D fighter.

I know all MvC2 fans are pissed about this, but I think you'd have been even more pissed upon seeing how the game play would have been online. It didn't work out on Japanese DC servers, it wasn't gone work on Xbox Live either. It was too soon for that idea, trust me.
