You know likewhen they ported an arcade game to nes, etc.
I thought the NES port of Hammering Harry was really cool, it added mini games and new characters, quite cool, made it definately worth getting on the NES. Also Double Dragon 2 for NES, was almost like an entirely new game.

Crazy Taxi on Dreamcast added the Crazy Box, and an entirely new city to drive through.

TMNT 2 NES - add 2 extra level not found in the arcade
TMNT 4: Turtle in Time - place in more recognizable TMNT baddies
Metroid Zero - totally redone the game from the original NES
Sword of Mana - totally redone the game from the original Final Fantasy Adventure

The list is too long to bother enumerating. Name any freaking port throughout the ages and there's probably something extra or interesting. Perhaps you should narrow it down.
Pitfall 2 VCS - A8 added a whole new secret level.

The PS2 port of TEKKEN 5 added one insane bonus, arcade editions of :
- TEKKEN
- TEKKEN 2
- TEKKEN 3
- STAR BLADE
What more can you ask for ?

Shining Force CD added the third book and the museum battle.

Legendary Wings changed up the sidescrolling part quite a bit. Capcom actually made it seem like a completely different game.

I suppose you have a point, I guess I don't want a list of everything but something you personally found really interesting. So far some really good replies. I love extra levels in a different port or when one port is far superior to another.
EG Batman Return of the Joker was okay-ish on the Genny but the Nes version is far superior imo, although maybe they could have called it BROTJ Death Ray Batman.

-The Xbox port of Doom 3 added campaign co-op mode, which sadly I never got to participate in.
-The Xbox version of Farcry, dubbed Farcry: Instincts, was essentially a whole new game, adding various feral powers and abilities.
-The Xbox port of Silent Hill 2 added in a new playable character and chapter.
We really had it good on Xbox as far as ports went, from both pc and PS2 ports. The Xbox versions usually added some extra gaming goodness.

Final Fight CD - Add time trial mode
Final Fantasy I & II: Dawn of soul - add extra secret dungeon
Chrono Trigger DS - add extra sub quest
Resident Evil 4 Wii - add all the content from GCN, PS2 & PC
