How hard is it to replace the connector cable to the TV for the 7800? I know it's a simple wire that you need one of those Game/TV switches with, but is that wire essentially a single composite? or is it something hard to come by that you might have to pay through the nose to get? I might get a system without the RF for somewhat cheap if it's not hard to replace.

It's exactly the same as a composite wire. Nothing special there, so yeah any of the composite cables, or RCA audio cables you have will work fine.

I'll second that confirmation. FYI, the best 7800 to get is the original model, as it has superior 2600 backwards compatibility. One can tell it by the serial number font on the bottom. If it's an original model, it will have a smaller font than the model numbers.
The later models weren't Supercharger compatible, and could choke on 2600 games like Robot Tank. Original models can be easier to repair, as they have socketed IC's on the circuit board. They snap in and out!
