Finally tracked down a long box version of Resident Evil on the playstation hoping that the original Gorey intro with the blood and chris smoking was intact but it looks like I have the censored version. How many versions of the original resident evil are there and which one is the uncensored one i'm looking for?
Also, what's up with some versions having different music?

The only uncensored version of Resident Evil 1 is the PC version (at least that I know of) and of course the original Japanese release. As for the different soundtrack I can actually explain that one. The Sega Saturn version had a different soundtrack then the one in the original Playstation version and Capcom decided to use that Saturn soundtrack for the Director's Cut release. I'm guessing Capcom must have prefered the Saturn versions score over the original to have replaced it for the Director's Cut PSOne release.

Aren't some copies of the Saturn version uncensored?

If any of the US console copies are actually uncensored that'd be pretty neat to find out. I thought only the PC port was uncut in the US.

Just found out that the French and German PAL releases of Resident Evil Director's Cut feature the uncut intro.

The Sega Saturn version had the same soundtrack as the original PSX version.

You are correct good sir, it was the Dual Shock version of the Director's Cut that had the new score.
