2001 is probably your best bet - when it comes to N64 sports titles, the later ones almost always seem to be better.

If multiplayer matters to you, watch out. I think I have NFL Blitz and NFL Blitz 2000, and--if I remember correctly--Blitz only allows for two players, while Blitz 2000 allows for four players. I don't know what the others are like, though I guess they probably also allow for four players.

Either way, you can't go wrong with NFL Blitz.
