I don't have one, equally adore too many games. I think even making a definitive top 10 would be difficult!
I used to be a big Avalon Hill fan with Diplomacy being my favorite of their games.

I would have to say Halo 2 just because of all the fun I've had at LAN parties playing with my friends. However that has more to do with my friends than the game.
My favorite game to play by myself is Elder Scrolls III: Morrowind.

Unreal Tournament (1999)
Nothing calms my nerves like a game of UT. There are games that I have enjoyed more (Mega Man series, Final Fantasy VIII, Ico, Chrono Cross), but they are all finite experiences. I could play UT every day, but I go a few years between playthroughs of my other favorites.

For me, it's a total tossup.
Retro- Megaman 3.
PC- Unreal Tournament, because my wife and I play it against each other instead of arguing.
Modern- Portal
I guess if I had to choose only one, it would be Megaman 3. I play it trhrough about 3-4 times a month still.

Metroid on the NES.
It's a timeless classic that I can play over and over again, and never get sick of it.
Close seconds. Blaster Master, Contra, Sonic the Hedghog 1, Mike Tyson's Punch Out.

I'd have to go with Kirby Super Star for the SNES. Close second would have to be Space Station Silicon Valley for the N64. Distant third is probably Star Wars: Jedi Knight: Jedi Academy for the PC.

Super Mario 64. Most people won't agree with me, but that's fine. I just felt a lot of magic around that time, I was becoming a teenager, 3D was new, arcade quality systems were out, and I loved everything about the game. I still haven't really played Mario Galaxy 1 or 2 yet, they might become my new favorites, until then, Super Mario 64 all the way!

Mine would have to be castlevania rondo of blood, bionic commando, metal gear solid, silent hill1-4, diablo, postal 2, ff 4-6, vampire the masquerade bloodlines,streets of rage 2, and sonic the hedgechog 2. All of those i love to death and are my favorite depending on what mood im in.

Toss-up between NiGHTS into Dreams and Burning Rangers, I played those games to death, had so much fun with them.
But this is a very hard question, as there are a lot of other games I really do enjoy that have more replayability than these two games, such as NBA Jam T.E for Arcade and Street Fighter Alpha 3.

Link's Awakening-GB (GBC's DX colors are too bright and saturated)
Darius II- Mega Drive (Best console port I've played)
Lego Star Wars II- GCN (Better than the first, not as long and tiring as Complete Saga)
Pac Mania- Mega Drive (Decent music, solid gameplay)
Super Mario 64 (Amazing game, somehow never gets boring)
Also, I'm on the ropes about Fester's Quest. Can't decide if it's good for the gameplay or bad for pure concentrate Nintendo Hard difficulty

Super Mario 64 for me. I feel that it aged well for a N64 game. Super Smash Bros series is up there for me too, and the original The Legend of Zelda. I feel so cliché.

Man, that just makes me happy!
My choice...Super Mario 64. I'm one of the rare people who first played this (and got 120 stars) AFTER playing through and getting all 120 Shines on Super Mario Sunshine. And even though I played it after the sequel, it was good enough to pass SMB 3 as my #1 game of all time.
Just got all 242 Stars on Galaxies 2 and had fun, but nothing quite mixed fun and difficulty for me the way SM64 did. I think that people who don't go for all the Stars/Shines/Exits on Super Mario Bros. games are missing the most fun parts.

#1 - Phantasy Star Online (DC/GC). I could play that game forever, and probably put in more time offline than online. The "three button combo" gameplay just never got boring and the random level generation made it very replayable.
#2 - Morrowind (PC). No game ever had such a great feeling of exploration. Hm, I wonder what's over that hill? Just walk over and find out. Lo and behold, there's a cave there, with some evil priests. Dive in the ocean - look, there's a sunken ship. It was just amazing. I never even finished the main plotline, but man what a great game.
#3 - Ms. Pac Man (arcade) - infinitely replayable, and that little bit extra going for it over Pac Man.
#4 - Civilization (PC) - greatest, most addictive strategy game of all time. Easy to get into, yet very deep, and a really cool and unique premise to begin with.
#5 - Hm... need to think about my #5 spot.
