edit: if I posted this while wasted on natty ice then I must really dig the jazzy sound of this track from this great game. I am SURE it wouldn't be at the top of my favorite video game music but I must like it for me to concentrate on it while wasted.

lol. I'm pretty fond of Bubble Man's music, and more recently, Tornado Man's stage is awesome. Chemical Plant is damn good though. Not to mention, every single track in Snowboard Kids.

For Sonic games I'd have to go with Ice Cap Zone from Sonic 3. Castlevania and anything by Yuzo Koshiro pretty much owns all else for me though in terms of game music.

I was never really too fond of Sonic music for some reason except for on Sonic CD.

Shinobi 3 has some great music, even though Yuzo isn't doing it.
And despite people hating the soundtrack, Bare Knuckle 3/SOR3 has a few choice tracks.

I really liked garegg and that version of bloody tears for castlevania pales in comparison with the original imo. I'll go with Solstice for the NES. I'd never heard of this game until I clicked randomly one day. Title music is epic, and the game music is also amazing.

Actually, I love VG music (Metroid, Toejam & Earl, Megaman....lots and lots of goodness), but when asked this question, KC always comes to mind first.
That said, I must add the songs from Gradius II for the Famicom are also full of win.
EDIT: As much as I love Sonic music, Chemical Plant doesn't do much for me. I love Hill Top Zone's music, though. And Casino Night is a classic tune.
