I don't know much about them, but I have heard about devices that let you copy gameboy games and put them on blank cartridges.
Would it be possible to use one of these to put a modified rom of Metroid II(colored) on a blank cartridge?

Yes.
I use the smartboy. Its nice cause its writer/reader is separate, so you can do stuff like pull roms/save files off your real gb games.

The product I recommended connects to the computer via USB cable. You send the games you want to play over to the flash cartridge, and then you disconnect the USB cable and insert the cartridge into your Gameboy. Since it's just a game cartridge, I don't see why it wouldn't work with the Gameboy Player for the Gamecube, but I don't have a Gameboy Player here for testing to tell you for sure.
Perhaps you should send an e-mail to the store's customer service to inquire about this.
Some flash carts can be picky about what hardware they are used on. I've tested the smartboy on gameboy / gameboy pocket, and the super gameboy (I think, memory is failing me). I imagine its fine with the GBA as well (and doesnt the gamecube gba player use gba hardware?)
I don't think the DS supports gameboy and gameboy color games, so you're sol on that.
