I just got one of these used for $2. Is there anything interesting that can be done with it? I couldn't find a list anywhere that tells what games can use it.

Pokemon Stadium 1 and 2 are the most obvious ones. Perfect Dark, Mickey's speedway, Mario Tennis, and Mario Golf all come to mind as games that use it. Usually they just unlock an item or something. I can give you a complete list tomorrow if you like.

It's basically a "memory card" that lets you insert Gameboy cartridges. Usually it just lets you copy data or something like that. I can't find a list of all the games that can use it, though.

Sure, I'll post when I get to work.
The transfer pak is designed to transfer data from a game boy game to an N64 game. This is usually done to unlock something in one game or another. With the pokemon games, it allows you to use Pokemon stadium as a database utility for looking at your pokemon, and storing them, and using them in battle.
A nice novelty, and a precursor to the Gamecube to Gameboy Advance link cable that's currently availalble.

In Mario Golf, can't you use it to actually transfer your character from the Gameboy version? I seem to remember it does something like that.

Mario Golf - Players can transfer characters from GBC to N64 and use them | Players can transfer the characters with their XP back to the GBC
Mario Tennis - Connecting the games opens up four mini games and new characters in both games.
Mickey's Speedway USA - Once linked with the GBC game of the same name, Huey is opened up on the N64. Nothing is gained in the GBC game
Perfect Dark - Once linked with the GBC game of the same name, 4 cheats are enabled on the N64 game (Cloaking, all guns in solo, RTracker/Weapon Caches, Hurricane Fists). Nothing is gained in the GBC game
Pokemon Stadium 1,2 - Lots of stuff: play games on TV, battle pokemon on N64 game, manage pokeboxes, look at stats, etc.

The neat thing about the Pokemon Stadium games is that if you beat the stadium(s) they'll reward you with rare pokemon. The original is better about that than the second. In the original I believe that each time you beat it and have an RBY cartridge inserted they reward you with either one of the three starters, one of the two unique fighting ones (the punching or kicking one, forget the names), or one of the two fossils (Omastar and I can't remember the other one). That and you can unlock the surfing Pikachu in the Yellow version.
The GSC cartridges only get some Pokemon with new moves and they're not all that special, like Baton something Psyduck or something like that. It helps with breeding but it's not anywhere near as good as getting a starter. Although if I remember what I read you do get access to some trainer that can teach your Pokemon moves they've forgotten, meaning that whichever legendary bird you didn't get first can go back and learn their good move (Ho-Oh and Lugia).
I haven't fooled with it too much yet, but I picked them up for when my Pokemon passion rekindles. Every half a year or so I play them a ton and then I lose all interest for about another half a year.
