Preferably a simple way if there is a simple way. like having to solder the top of the board without flipping it.

You mean just composite video and audio jacks? You can tap them all from the a/v port if you want something simple. The pinouts are on gamesx. Depending on what you want, soldering only on the top is a possibility.
