The above is based on actual arcade play experience. Had I ever encountered an Outrun 2 or Outrun 2: SP machine, it would surely rank near the top of my list. Also never played Hydro Thunder or SF Rush 2049 in the wild, those would knock the lower contenders off the list.

I listed them in the order of how many quarters I sunk into each one, and playability. I had to of put at least $200 in my top three during their prime years.

Of course Cruisn and Daytona are on my list
But my top quarter taking arcade racer was Super Off-Road

its the only simulator i have ever seen so far where you have to actually drive it like a real car.. You have a gas pedal, brake pedal, and a clutch pedal, Paddle shifters. or 6 speed stick shift. The only way you can get any more real is if you go out and buy the actual car and drive it!

I currently own Road Riot 4WD, Super Off Road, RoadBlasters and Great 1000 Miles Rally machines, and used to own Dirt Dash.

Only 10? Aw hell, I used to play everything with a steering wheel, yoke, or odd control. I do love Roadblasters, but I've never played the cockpit version. I also love Off Road and Indy Heat, but those are not cockpits, either. This also leaves out Great 1000 Mile Rally (maybe they made a cockpit, I don't know).
Pole Position 2 - They used to have one up where I go camping. It was a PP converted to PP2. I used to play that game friggin' constantly.
Race Drivin' - Best cockpit ever, at least until Ferrari 355. I do mean cockpit. The seat slid out and rotated so you could slide in and be immersed. Add to that a shifter with a "real car" feel and force feedback that could throw a child across the room, and you have yourself a driving game.
San Francisco Rush - The force feedback on this brought me back to Hard Drivin'/Race Drivin'. Add to that some good tracks and scenery.
COPS - Ok, so I haven't played this in forever, but the time I did play it I must have put in about $5. I was 11 at the time, so I guess I shouldn't trust my memory that much. Still a neat game. Laserdisc driving and shooting.
Cruisin' USA - Although Daytona USA is a great game, I used to play Cruisin' more for economic reasons. What other game can I race as a school bus, a beetle, or a hot rod? Not only that, but this one was 75 cents instead of a dollar, which means I could play more.
Speedway (Chicago Coin EM) - I had to out-weird somebody, so here is my entry. The technology used is reminiscent of a baby's toy (you have to use your hands). It had a car graphic in front of a projection screen. Scenery and other cars were projected and when you crashed the screen would light up like flames. 8 track player for sound. Neat use of technology.
Need for Speed something something - I used to have NFS: HP2 for Gamecube, and this game is pretty much an arcade port of that. Needless to say, it was also as easy in the arcade as in the home version, so I was disappointed to find that I did NOT receive a free game for coming in first place. Still a good implementation.
Spy Hunter - Great game, AWESOME cockpit
Turbo - I keep trying to tell myself I didn't love this game, but I still play it every time I see it. After all these years I still suck at it. Oh well.
Virtua Racing - This is another Sega title I keep thinking I don't love as much, but I did play the bejesus out of back in the day. It's like virtual reality..you can even pick your view!
I thought this list would be easy, given the fact that I still play almost every game I see that has a steering wheel. Oddly, I had to dig and dig through my memories. These must be my favorites, as they're the ones I remember.

I haven't even played ten sit down arcade racers, but I liked:
Turbo Outrun
Daytona USA
Super Monaco GP
I was much less impressed with Hard Drivin' even though it lives up to its title.

Ooo, good question... let's see here:
Rush 2049 - the best, period.
H2Overdrive - It's sure giving Rush a run for the money.
Outrun 2 - Love mode RULES
Outrun - Classic and cool
Sega Super GT - Amazingly fun, my favorite Sega 3D racer from this era, I'm happy it is on someone else's list
HydroThunder - It's awesome too.
Crazy Taxi - I could play this game all day. Almost bought an upright version of it at a recent auction, I was VERY tempted too.
Jambo Safari - This is one of my favorite games where you drive and do stuff. I stupidly bought both the Wii and the DS version when I heard they came out. They suck, the arcade game is awesome.
Hydra - Not sure if it was a sit down, but it's a racer and awesome so I'll put it here anyway. I one day want to own one of them.
Vapor TRX - An often forgotten Atari racer
Star Wars Episode I Racer - It's not the best, but it's pretty decent and the controls are some of the most fun to use.
T-Mek - I'm so glad I found a copy of this for the 32X this weekend. The arcade game was weird but really fun.
How many is that? I'm over 10, but I can't just narrow it down!

I used to like playing TX-1 with its tri-screen display,i think it was the first time i had seen such a multi-screen cab.

I've been wanting to try TX-1 since I saw it in Bill Kurtz's book, Arcade Treasures. I have never seen one on location, probably due to the fact that ti's humongous. I tried to play it in MAME, and it seems promising but obviously the experience is lacking.

It's hard to beat a Pole Position II.
I wish they had never left those enclosed sitdown cabinets behind. The open ones of the past 25 years just don't have the same feel or atmosphere as those early 80s cabinets had.

i highly agree man
the idea of the enclosed sit down cabinets were to try to get you to feel like you were in the game that much more.
Now when you play say Nascar Racing its not the same.
