Yakuza 3 and 4 (also Ryu ga Gotoku Kenzan and Ryu ga Gotoku Of The End if you're into importing, PS3 games are region-free)

Demon's Souls (best game on the platform in my opinion)
Tales of Vesperia (Japan-only)

I also highly suggest Metal Gear Solid 4. You might want to look into Red Seeds Profile if you like adventure games, but it's also Japan-only and very expensive. It's like 80% English text and 100% English voice acting though and entirely playable without any knowledge of Japanese. Incredible game too.

They're not platform exclusives but they're still worth mentioning. Tales of Vesperia is significantly updated and I wanted to give a shout-out to Red Seeds Profile because it's one of my favorite games this gen and I like to let people know that it's not a 360 exclusive and the import is entirely playable.

I would suggest Killzone 2 (and to a lesser extent 3) for your list if you have interest in the FPS genera. I was pretty surprised when I finally picked it up how fun Killzone 2 can be, and kicked myself for not picking it up sooner.

I can also personally suggest:

Metal Gear Solid 4 (although its really a game for hardcore MGS fans then anyone else)

Little Big Planet

Grand Turismo 5

If you like a good action game, Heavenly Sword is a pretty solid title. It's gameplay will sort of remind you of God of War, but it has enough unique gameplay to seperate it from that series.

You can add Katamari Forever to it, for MOAR Katamari action. God of War Collection/3 can go in, as can Killzone 2 and 3.

Otherwise, thats all you need to worry about.
