I just bought Conquest of the Crystal Palace for my Nintendo Entertainment System, (great game!) and I'm kind of digging the classic Chinese motif right now.
I can't think of too many other games with the ancient China theme...

Shui Hu Feng Yun Zhuan for Mega Drive, it's a pirate made game, but is surprisingly good, and as far as pirates go, it's not too hard to track down.
Also Lgend of Wukong for Genesis/MD by Super Fighter Team, though they're currently sold out, they might make more copies, just keep an eye on their site.

Suikoden (PS1)
Kind of a stretch, since it has western fantasy elements, but it is based on the chinese novel Shui hu Chuan.

There are a ton of China-themes games seem to be adaptations of either the "Romance of the Three Kingdoms" or the "Journey to the West" stories.
Sango Fighter is the only one I can think of off-hand that hasn't already been mentioned. Enslaved is based off Journey to the West, but it's been changed so much it's hard to really claim it has any Chinese themes anymore.

Kessen 2 is also based on Romance of the Three Kingdoms. This is my favorite Koei title outside of the Romance of the Three Kingdoms and Nobunaga's Ambition games.

Forbidden City takes place in China in the 18th century. Not exactly ancient, but worth a look.
Saiyuki: Journey West is a great game as well.

As has been mentioned, Saiyuki: Journey West on Playstation is an excellent SRPG.
The Tenchi wo Kurau II games on Saturn and Playstation are great Capcom side scrolling beat-em-ups.
And the first Tenchi wo Kurau beat-em-up is available on PC-Engine Super-CDROM. That game is notable for having a cool horseback riding sequence.
There is also a Capcom RPG version of Tenchi wo Kurau for Famicom (and iirc SFC).
The Chinese World series on Famicom and SFC...
There were also versions on the Gameboy, and the SFC games were released on GBA, if I'm not mistaken.

Parts of Tomb Raider II is set on/near the Great Wall of China and in a Chinese temple. Don't know if that counts. :P

China Warrior by Hudson for the Turbografx 16.
This game is quite horrible but the motif is, never the less, undeniably ancient Chinese.
I'll think of more later.

This one is Japanese but similar.
Tōkaidō Gojūsan-tsugi or 53 Stations of the Tōkaidō was a game for the famicon. Fireworks maker Kantaro travels along the 53 stations of Tōkaidō to return to his fiancee in Edo (now Tokyo) from Kyoto where he was training. Since he is a fireworks maker he uses his fireworks to thwart any attackers who are after him for the secret of fireworks manufacturing.
It is a very difficult game.

Chuuka Taisen/Cloud Master for arcade and it's various ports by Taito is a notable mention. I have it for Master System and it's a decent side scrolling shooter. Like many other other games it seems to be inspired or based loosely upon Son Wukong and The Journey to the West. Japan seems really interested in that particular tale.

There's the sequel too Shin Chuuka Taisen for Wii. Incidently, I think due to StarFish developing the new game I think originally Hot-B was the arcade developer while Taito published, for what it's worth.

Thanks for all the replies. I was thinking about Chuuka Taisen, but for some reason (:monkey:s) I was thinking of Sonson. Wait, does Chuuka Taisen have a monkey riding the cloud, or is that just Monkey King for the Wii?
And, I think the next Chinese game I'll go for will be Jackie Chan's Action Kung Fu, preferably for the TG16 but I hear the NES version is good too. I'm going to hold out for a deal on the price, though.

Probably several games, as that is based on Chinese mythology. ;) Ie. it could easily be both games for all I know.

Shanghai Triple Threat on the Saturn has Chinese-style music and backgrounds showing ancient Chinese sites. Very flavorful. It was also released on the 3DO.

I've tried to lean Mahjong a couple times, but I've never stuck with it. I have Vanilla Syndrome for the PC Engine, and whenever I practiced with a "how to play Mahjong" guide, I'd somehow wind up playing Double Dragon instead. :smash:
