I would be interested as well. Not because of an injury but I may wish to Play Dead or Alive Extreme beach volleyball again.

I think it would be great if we could come up with an effective way for those with physical disabilities to have greater access to video games. As much as we enjoy this hobby, I know there have to be folks that want to but can't.

Besides they created XBL so the mentally challenged had a place to play with each other. (Not being serious obviously)

It's pretty simple really.
Just build a break out box with a jack for each input and connect whatever works best for the individual, whether that's a foot pedal, a joystick, a specialized switch mechanism, or whatever.
I've done similar things myself just to mess around with different control options.
Certain models of DualShock controllers are great for prototyping, since you have access to all the digital inputs without even having to solder anything.
