After recently purchasing two "AS IS" SNES's off of eBay, I discovered that one of them has a simple sound module problem, but the other displays incorrect or glitchy colors. It plays perfectly though, sound included, as if nothing is wrong with it. Is there any sort of fix for this or would this be a bigger issue that would be better to just replace?

There's various places to look. The first model has two video outputs (also gives the weird option to mirror on 2 TVs). Try an RF box if AV is giving trouble.

Encoder chip problem could happen too. I suppose in that case RGB might still work.
Worst of all, some kind of graphic hardware loose connection or failure.

I've seen more than one SNES with a bad NTSC color crystal, although that typically that manifests as a black & white-only picture.

Yeah, if it's switching in between color and B&W then the fix is pretty easy and involves adjusting a pot that's somewhat near the power switch.
If you're talking about actual graphical corruption, then you might be SOL: three of my SNES/SFCs suffer from bad video RAM and/or normal RAM, and I haven't heard of an easy way to fix that.
