Today I was planning out a new setup for all my consoles. I was looking for an s-video cable for my PS1 and a component cable for the PS2 when I realized that the light guns won't work with either. At least that's my understanding. Someone please correct me if I'm wrong.

I'm pretty sure you're mistaken. What matters is the type of tv. Traditional lightguns only work on CRT televisions and monitors. It shouldn't matter what kind of video signal is being output to the tv, as long as the tv itself is a 60Hz CRT.

That, I do know. However, I have the Guncons and they have a lead that's supposed to plug into the composite.

Component I think you need to find the sync line. s-video would involve some kind of adapter unless the cable has a suitable jack.
A SCART to component transcoder box is an option, if more expensive. That'd bring your PS1 up toward PS2 image quality.

Just get something like this old Mad Catz, has Xbox, PS1/2, and GBC/N64/SNES.

Use S-Video for all games but the GunCon ones. They use Composite. CRT's switch just by changing the channel. Also remember that PS One's don't output S-Video. Only the old big Grey units do. As for the PS2, I find myself asking why I have bought PS2 light gun games? I have the PS2 hooked to an LCD and really don't feel like moving it around!!! At least the GunCon 2 had a separate composite video wire, so you can keep it connected at all times, but unplug the gun and put it away.

Lightguns won't work on all CRT's, however. They will not work on HD CRTs. I have a rear projection HD CRT, and I'm out of luck on lightguns.

There's a little adapter you can get for the PS1/2/3 that you plug into the PS AV jack and then lets you access the composite out of the system, plus hook up another set of cables after it. What I currently do is the PS2 with the dongle, Guncon connected to dongle, then connect component cables out of that into my SD TV.
I picked one up years ago for Time Crisis on my PS1 and have had it ever since, I'm sure they're probably out there on ebay, but it's a pretty obscure little dongle. Mine works like a charm, but I basically only keep an SD TV around for old light gun games.

The Mad Catz S-Video and RCA AV cables are complete and utter shit. I've bought a few and they always added interference to the S-Video line. Stick to genuine Sony S-Video cables.
Why would PSOne models' S-Video capabilities be crippled? They use the same video plug as the PS1, 2 and 3. The cable should work.
