Can someone please explain to me what this is, its 1:15 into the video. Is is a Custome built console selector? If so, what goes into making one?

I've seen 8 into 2 selectors but never anything larger. Honestly if you know how to run all the wires and switches you could wire up a 100 into 1 in theory.

Since it's "touch to select", it's probably going to be a bit more complicated than a big switch. I would guess it uses a series of analog multiplexer chips and possibly a microcontroller. Or it's just a bunch of mechanical push button switches.

It's an Atari Video Game Selection Center. The unit is basically a giant box with forty-four 2600 games in it. They were apparently used as retail demo units and are now quite rare.

Neato! Those joysticks and paddle knobs look much more comfortable to use than the standard ones. Too bad the unit is so rare.
