I am still waiting for a remake of Dread Dragon Droom (http://en.wikipedia.org/wiki/Dread_Dragon_Droom) - my favourite game as a young child.

Wonderboy 3: The Dragon's Trap. If this was done in 3D Zelda style it would probably the single best Adventure-RPG of all time.

My thoughts on a game remake are a lot like movie remakes. Siskel & Ebert once said that movie remakes should only be reserved for bad movies, because good movies don't need to be remade. I feel the same way about games. The good ones don't need to be remade (with rare exceptions, like Final Fantasy I & II from the NES days being modernized) but the bad ones ought to get fixed up.
Now, as for which ones should get the remake treatment...well, pick just about any AVGN episode where he handles an NES game and there ya go. I'd start with Dr. Jekyll & Mr. Hyde.

Nightmare on elm street. I don't know how it would work. But i think it could work. Friday the 13th. Done in a slenderman kinda fashion
