Which is better?

The $30 Sony PS1 S-Video Cable, or the cheaper costing AV Adaptor Cable which has plugs for hooking up composite A/V and S-Video cables at the end, plus a plug that is apparently for hooking up another Sony adaptor?

The box on the latter says not to make a chain of hooking an adaptor into an adaptor, but then why is it there in the first place (why would you even use the AV Adaptor cable if you're going to plug a PS1 S-video cable into the other end, anyways. Didn't understand the rationale behind this).

go to Gamestop/wal-mart/best buy and get a generic PS2 S-video cable for $9.99 or a used one for $4.99.. There is even a S-video/AV cable that works with PS1/PS2/GC/ and Xbox

As far as I know, the box you're describing was for the Guncon.

Here's a link to the Guncon site that shows what the box is intended to do: http://www.namco.com/support/connect_guncon

I got an A/V & S-video cable @ GameStop for $15. I think it was from Pelican.

$30 for a cable? You can get a PSX for $15 off of eBay. WITH a cable.
