What a shock, SNK was shot down by Sony. I don't plan on ever getting into anything post PS1 myself but it still bothers me that this happens.

Thats not the way Sony sees it. In their eyes, us Americans only like to play 3D-adventure games and insipid RPG's. We'll never get to see fun games like this.

If I were a betting man, I'd say that Sony's denial of Metal Slug 3 has less to do with the game itself and more to do with the working relationship between SNK and SCEA. Atlus was able to release Disgaea (which could pass for a PSone game), while Sammy brought out the entirely 2-D Guilty Gear X2. It would seem that Sony isn't uniformly biased against old-fashioned 2-D titles, they're just biased against old-fashioned 2-D titles from certain publishers.
By the way, doesn't the PS2 version of Metal Slug 3 have a number of extra modes that weren't in the Neo-Geo original? I really dug the bonus stuff in the PSone edition of Metal Slug X, so I'm more interested in the PS2 port of MS3 than the Neo version.
I'm tempted to send Sony a letter about this, even though I haven't written to a game company in ten years.

It's been touched on before (I want to say by Mr. Zach Meston but I won't deliberately misquote the man) that Sony doesn't like 'old' games to be ported over unless they're compilations and sold at a budget label.
If you ask me Playmore is just being greedy by trying to pawn off Slug 3 by itself, if a bundle came out with 1, 2, X and 3 though, I'd buy that in a heartbeat with intentions of getting a PS2 later for it and it alone down the road.

This is pretty fucking bad news.
See, I was going to get a ps2 this fall JUST FOR THIS GAME. I shit you not. I was planning to get one right before Christmas so I could play this game (I love the NGPC ones). Oh well, it's not like Sony will miss my $200. I swear, it's little shit like this that makes me want to mailbomb Sony's corporate offices (that's a joke, by the way).

It's been said that they also turned down Ys I and II Eternal Story earlier this year, though that isn't much of a loss since it's just an average remake.

Metal Slug 3, PS2 on a huge plasma screen tv. It was so beautiful I nearly wept. I immediately purchased the game and have learned OH MY GOD I SUCK! I SUCK AT THIS GAME SO BAD! If I were playing this game in the arcade I would've blown a couple hundred thousans won already and prolly would've been picked on and beaten up by any 12 year olds around the cabinet.
But it's really, really pretty and a blast.
Oh, and Metal Slug does have a collection out: Metal Slug 1, 2, 3 and X all on one CD for PC. (yeah, I suck at those, too.)

As a gamer who doesn't care about 2D or 3D but rather good gameplay, I say it's a bad decision.
However, if I were a businessman at Sony, I can understand the hesitation to publish the game. I don't know if it was published in Japan already, and if, how well it did there, but let's face it...for us hardcore niche gamers a Metal Slug 3 would be a sure buy, but for the wider audience there might be not enough name recognition to make it a commercial success.
The old enhanced FF games are an exception because the series is still alive, and has a wide fanbase, we got the new Contra (with flashy graphics!), we'll get Gradius V, R-Type Final, and I don't know how well Ikaruga did on the GC. An older enhanced game which only had a limited appeal and isn't so well known today is a financial risk.
Sony looks for great gameplay, and money doesn't rule over gameplay today, but Sony looks for great gameplay for certain types of games - "current" games which have a wider appeal, retro-games are an unnecessary risk with prospects of modest royalties. Videogames are a business, and business decisions are not made by idealistic videogamers, but hard-nosed businessmen, and rightfully so.
Maybe Sony forces SNK to deliver more than just Metal Slug 3 to make it more appealing...at the end we might profit from the stubborness of these businessmen. :)

Casual and mainstream gamers have grown accustomed to a decade of 3D whiz-bang on home consoles; they see 2D graphics and they automatically assume "obsolete." Recent example: Cinemaware is getting pounded in reviews of Robin Hood: Defender of the Crown over its 2D-lookin' battle sequence. Videogame press and publishers have long reinforced the concept that 2D = old and crappy and 3D = new and spiffy.
Again, I'm talking from the perspective of the corporate weasel. He doesn't play games, so he doesn't understand gameplay, but he can point at the TV screen and say "That's pretty!" or "That's not pretty!"
2D is only part of it, of course. As previously noted, politics and money are the primary factors in determining what gets through "concept approval" and what doesn't. The U.S. "branch" of SNK is basically a one-man band, so it's gonna be very difficult to get Sony to take him seriously.

Then maybe it's time for the third parties to stop taking Sony seriously. If they're going to stifle creativity with their asinine policies on content, any company that still considers gaming to be an art form (rather than a quick way to make money) should abandon the Playstation 2 as a gaming platform.
It's been proven time and time again that console manufacturers NEED third parties to survive. Sony is especially dependant on them, and they know as well as we do that the PS2 would wither and die without the support of companies like Capcom, Konami, and SNK. If these third parties and others showed some backbone and stood up to Sony, these cancellations just wouldn't happen.

...don't bang your head against a wall. :) The basic setup 'smaller and bigger developers vs. the hardware manufacturers' didn't change, videogames were always a business, but with the expanding market and growing profit rates, it's more business than ever.
Third party developers doesn't equal third party developers. There are the lil fish, and there are the big fish with a lot of clout. What would give SMALLER third party developers more freedom and clout is fierce competition, that means two powerhouses with a 50/50 marketshare, or three powerhouses with roughly equal marketshares. Then the smaller developers had more choices, and the hardware manufacturers would dependent on them more.
In the current situation with one undisputed marketleader and two giants which wanna grow, overall more clout goes to the BIG third party developers. N and MS offer attarctive deals to them, Sony is aware of it and needs them too, and the big fish are able to spread different projects to different consoles according to the best delas and best projected sales. As long as the situation doesn't change and the market is very profitable, the big third party developers will acquire more and more smaller ones, a concentartion process already started, smaller developers will go bankrupt more often in the future.
If MS catches up, the situation will get better for the smaller developers IF the market is till profitable and won't stagnate.
