I'm in the process of prepping an arcade cabinet to use as a mame machine. I want it ready to play most games in time for my halloween party which is in two weeks, but I've never done this sort of thing before. I was hoping someone here who has could answer some questions.

First of all, I ordered a J Pac from Ultimarc, so most everything will be running through a Jamma harness, so I'm not too worried about the control scheme. What concerns me is the monitor setup. I've been using EmuLoader for my games up until now, but with an arcade monitor I won't be able to load into Windows so I have to get one of those Arcade friendly GUIs.

I've been looking at ArcadeOS which seems to be the popular choice, but I can't seem to find any info about how to load/use it. Can anyone give me an idea of how it works so I don't fry my monitor?

Well, I've never done it before either, but maybe this site will help you with some of it:

Ok I toyed around with ArcadeOS a little bit, and I think I've got a good handle on how it's going to work, but I've run into an odd problem. I tried to run a vertical screen game (bagman), and now the menu is vertically aligned. I've checked the config file and the readme, but I can't for the life of me figure out how to get the screen back to horizontal. Any ideas?

Hmm, not sure man. I have yet to mess with ArcadeOS myself. Can anyone else help him on this? On an off note, I found this:

I burned the image and tested it. Looks like it would be fairly easy to set up a mame cab with the software. I didn't go very far with it however, since I really don't feel like formatting my HD :) Perhaps if I can dig up an old HD I'll experiment with it.
