Anyone got recommendations on cleaning old dirt/grime from old controllers? Would Goo-Gone work best if at all?

Rubbing alcohol is cheaper and far more effective in almost all cases.

My recommendation is to take it apart. Does that go without saying?

Reason I ask is my N64 controller and the dogbone NES controller I got on ebay have alot of stuck-on grime on them and I'm trying to find a way to get it off. I tried an alcohol pad earlier with no luck.

If isopropyl alcohol doesn't work, you may want to consider disassembling the unit and running it through the dishwasher and/or soaking it. Grime is tough to deal with. Perhaps, some kitchen/tile cleaners would help?

In my experience the dishwashing liquid/old toothbrush method works the best.

After that you can attack it with isopropyl (not necessary in most cases).
