Tengen, Sunsoft, Data East... these guys made some real sellers on the NES market...what happened to them? Also what other publishers died out and why?

Tengen got lawsuited to death.
Data East only made a handful of good games (Magic Drop being one of them) and eventually died out about a year ago
Sunsoft... not sure where they are these days.

I also remember Sunsoft games during the 16-bit era...especially games featuring WB cartoon characters as in Bugs Bunny: Rabbit Rampage. The last few titles of theirs I remember during that era were developed by them but actually published by Acclaim.

Compile

Zanac X Zanac, Madou Monogatari, Puyo Puyo Dungeon are all 32-bit games, as well as a few of the Puyo Puyos they did (1, Tsu, and San, if memory serves). They've obviously got SOME type of presence, as they're licensing Puyo Puyo out to Sega.

Technos Japan is another one that's gone MIA, but is apparently around in some form (again -- in the form of licensing).
