I came across this the other day, anyone who knows of LINUX knows KNOPPIX. The bootable LINUX OS you run right off a CD which allows you to try LINUX without changing your OS. But givein the fact some here have trouble using MAME emulators. How would you like an OS that is pacifically designed to run only one thing and that is MAME. It doesn't come with any ROMS but they can be easily added for all the details.

Bootable MAME? That sounds perfect for kiosks/cabinet setups. Awesome!
