Well, I'm finally going to buy a Gamecube over the holidays, and I need some opinions. What 5 games should I buy first? I like pretty much every genre except FPS, so that leaves a lot of games. Thanks for your help!

Really depends on the style of game you like, I'd say off the top of my head.
Eternal Darkness (really weird, trippy, interesting game)
Mario Sunshine (its Mario)
Metroid Prime (only if you dont count this as a FPS)
Smash Brothers (if you play with some friends, good party game)
Animal crossing (developing quite the cult following, not a game for everyone though)

1.) Super Smash Bros. Melee
2.) Metroid Prime (no, really, it's more of an adventure game. I HATE console FPS games)
3.) Eternal Darkness
4.)Resident Evil (no matter what, but ESPECIALLY if you didn't play it on PSX)
5.) Your Choice. I have Wave Race, and I like it, but I was a hardcore fan of Waverace 64. Pikmin and Animal crossing are fun, if you happen to be one of the poeple that likes them. I haven't played them, but a lot of people like the Super Monkey Ball games too.

1st of all, you must get smashed with Smash Bros. Then cross over to Animal Crossings. Immediately following that, develope a Need for Speed. Aft :D erward you must Destroy all Monsters. Lastly, after buying all those games you can finally bathe in Mario Sunshine.
I'm ignoring everything you said in your post and am going to list the top 5 in no order.
1. Super Smash Brothers Melee
2. Metroid Prime
3. Animal Crossing
4. Super Mario Sunshine
5. This last one is up to you. Maybe Dead to Rights?

Want a really well-rounded GC collection?
1. Super Monkeyball 2
2. Beach Spikers
3. Eternal Darkness
4. Phantasy Star Online
5. Starfox Adventure
You can't go wrong. Good mix of twitch and "deep" games.

If you're not a "party" game player, substitute Monkey Ball 2 for Monkey Ball 1.

1. Super Monkey Ball 1
2. Super Monkey Ball 2
after that, I've only played these in small doses...
3. Super Smash Bros. Melee
4. Godzilla: Destroy All Monsters Melee

Mario Party 4 (well it's like 3, but better than 1 and 2)
Smash Bros.
pikmin(if it's cheap now?)
rogue leader(again if it's cheap)

(takes notes of recommended GC games....)
I own 2 games for my Cube -- Super Mario Sunshine and Metroid Prime. I'd recommend both to you! I love both of them equally.
I've also played Rogue Squadron and Super Monkey Ball and Waverace and I personally want these titles, so take that as a recommendation for each too.

Only five?
To make myself happier, I'll do two lists of five: single player and multiplayer. Choose which one best suits your style of gaming (read: do you have three hardcore gamer friends who are over your house all the time?)
Single:
1) Super Mario Sunshine. You'd have to be on crack not to make this your first purchase. And if you are on crack, I suggest kicking the habit. Crack is bad for you. I don't do crack and neither should you. But you should play Mario Sunshine, because it is as addictive as crack. I imagine.
2) Eternal Darkness. Nearly tied for first, but it's a little shorter than Sunshine. Just as addictive though. As Mario Sunshine, and crack.
3) Metroid Prime. I personally am still waiting for my copy, but let's not pretend it doesn't totally rock out just because I haven't played yet.
4) Animal Crossing. This can be an excellent multiplayer experience as well but it's best if you have no friends and want to pretend that you do. You'll need the e-Reader, a GBA, and various other doodads, of course, if you want to get the full AC experience.
5) Pikmin. Short, but a wonderfully designed and executed puzzle/RTS/action game. And it's gotta be dropping in price like crazy since it's officially a year old in a week or two.
Now, let's say that you're more of a multiplayer entity:
1) Super Smash Bros. Melee. The ultimate four-player fighter. Tons of great, diverse characters, amazing stages, a huge, heady rush of nostalgia, and fantastic gameplay. Necessary.
2) Mario Party 4. If your friends are willing to be in it for the long haul, play a few huge, 50-turn games of this one and stay up all night collecting stars. As the name suggests it's a fantastic party game since you don't have to be on the controller at all times, much like a traditional board game.
3) Super Monkey Ball 2. Totally eclipses the first one, since it's got all the old minigames. The only major difference is, games of Monkey Target take far less time than they used to, but you have to look at your own tiny corner of the screen instead of the whole thing.
4) Sega Soccer Slam. If you don't mind a little pseudo-sports action, and if you don't mind slightly offensive humor, the ethnic-stereotype characters in this one are hilarious, and of course the cooperative action can be a lot of fun.
5) Super Monkey Ball 1. They sell it for like twenty bucks now, right? And full-screen Monkey Target is a lot of fun...
As if this post wasn't long enough, below is my all-time top 5, assuming that like me, you like a healthy mix of single and multi player action in your life. But not crack.
1) Super Mario Sunshine
2) Eternal Darkness
3) Super Smash Bros. Melee
4) Metroid Prime
5) Tie: Mario Party 4, Animal Crossing

Keeping it to five titles isn't easy, especially since I have yet to play Metroid Prime, Star Fox Adventures and Mario Sunshine for more than a few minutes (whaddya know, no money :( ). Rather than make a list, I'll tell you about the games I have (after all, it all depends on your tastes).
If you don't have a PS2, I suggest you get Tony Hawk 4. They improved it over the previous titles of the game, and it's still fresh. Besides, the soundtrack rocks!
SSBM is fun, even in single player mode. Trying to get all the trophies is an interesting incentive to keep on playing.
Sonic Adventure 2 is okay if you get it used. However, if you've played the Dreamcast version, don't bother with this one. It's basically the same game, plus a new 2-player battle mode.
All-Star Baseball 2002: very disappointing. The developers didn't even bother to double-check details to make sure that they match the real team (sorry, but the detail mistakes pertaining to the Expos still grate me). I've heard that the 2003 version is much better.
NBA 2k2: Excellent basketball game. I've heard that the 2k3 version is even better.
XG3: Extreme G-Racing 3: Fast-paced futuristic motorcycle racing game. However, you kinda feel alone in the game, unless you play multiplayer. The AI don't really let you keep up with them. On the other hand, a fun feature is that you have access to weapons to destabilize the other racers.
Crazy Taxi: If you've played it on Dreamcast, don't bother. Acclaim just ported it to the GCN. The controls aren't really easy to learn, and that's too bad as it diminishes the enjoyment of the game.
Spider-Man: Smooth controls, fun game. However, its weak point lies in the indoors levels. The tutorial is well-done, btw.
Animal Crossing: Weird game. Very Japanese (just look at the emphasis on letter paper). It's fun and addictive, but defiinitely not for everyone. It does get a bit old after a while, but getting to play NES games is a plus side (remember that we're talking NES games. Therefore, it is Donkey Kong and DK Jr. on the NES you get to play, not the original arcade version).
This is about it. I also have Homerun Kings, Dave Mirra 3 and Rogue Leader (which I got for about $30 Cdn), but I haven't gotten around to playing them yet.

METROID PRIME - YAAAAAAAAAAAAAAAAAAAAAAAAAAAAAA!! The game is so god. Make it the first choice.
Super Monkey Ball 1/2 - Take your pick. You need at LEAST one.
Super Mario Sunshine - Just fantastic and bloody hard sometimes.
Super Smash Bros Melee - Good fun, good amount of stuff to unlock, great multiplayer.
Phantasy Star Online - Yay!

The popular games for this system really *are* the best games. Believe the Hype.
Super Monkey Ball - a launch day purchase for me and I played it just this past weekend. How many other games last that long?
Eternal Darkness - I'm a slow gamer so I'm still working on this one (i didn't get it at launch mind you), but it's an incredible experience. The sanity meter was a *great* freaking idea. Play it in the dark while you're home alone.
Super Mario Sunshine - Maybe I'm not as good as I once was but this game is anything but easy. But even after trying for a shine 10 times and declaring it impossible to get, I'd go back to it and get it eventually.
I also own and enjoy Super Smash Bros. Melee, Star Wars Rogue Leader: Rogue Squadron 2, Wave Race: Blue Storm, and Luigi's Mansion. All are great. Maybe not quite as great in my eyes as the three I've mentioned above, but great nonetheless.

Is there any reason to get Monkey Ball 1 instead of 2 except price?

I would argue that the single player puzzles are more inventive and reliant on skill/puzzle solving ability in the first SMB than the second. There are some devious puzzles in SMB 2, but there are a few levels that just take a little more luck than I'd like.
