What do you prefer? The original games (Sonic Jam) or remakes (Super Mario All Stars)?
Iīd say the original. When I played All Stars it didnīt feel right to me, I loved the "blocky" Nes games.

Not voting, because the question assumes that ports and remakes are always of similar quality.
Think of the Ninja Gaiden games.
Would you like the Ninja Gaiden III on NES or Lynx?
Would you prefer the Ninja Gaiden Trillogy to the NES games?
Do you like Ninja Gaiden Arcade on the Lynx or in its original form?
Ninja Gaiden on the NES? PC-Engine? Master System? PC?
Various people will all give various answers to these questions.

Companies could easily please both sides, if they'd have both an "old" and a "modern" graphics mode included. Such as the recent "Sonic Mega Collection". One option could leave the games looking like they did, while another option could provide updated sprites, reflecting Sonic's current "Adventure" style.

Like Ed said, the quality varies. Also, it depends on how I feel about the title/s. In some cases, I don't feel like it's worth my time for an exact port because I can just whoop out the original versions whenever I want. In other cases, I don't feel like the original NEEDS any "updating" or "improving". I usually feel that way about my favorite games that I really love and feel strongly about.

Unless it's merely a cross plateform port I really don't see the need for them. I can easily play the originals. But if a game has to be released after the original I'd expect either a total remake or at least an enhanced port (kinda like Silent Hill 2 or Fatal Frame on the XboX).
I kinda like remakes though, it's like a fresh take on an old game. For example my favorite video game is Shining Force (genesis) so I was thrilled to play the GBA version. Was it better then the original? No not really. Did the original NEED an update? I didn't think so. But playing the same game with nicer graphics, better dialouge, and extra features was a nice change of pace.

Suprised no one mentioned REmake yet, one of the best remakes ever. Its hard to find anyone that thinks the original is better.

You know, I loved the Remakes of SMB2, SMW and YI, but the remake of SMB3 on the GBA didn't seem to hold up. They screwed that one up whereas the other three were very replayable. My problem is that with the remake of SMB3 on the GBA, they didn't push it to the full potential. Instead, they made you rely on the eReader. You can't play castles again, special items are only accessed through cards. It was not what I hoped for. Sad it is the best game of the series. But SMB2, SMW and YI all had big replay valiue. You can choose any level completed and play it again regardless of whether you won or not, plus collecting the coins. These games were highly replayable.
I will probably mainly prefer the upcoming Mario 64 DS over the original for the sheer amount of extra stuff in it, but I'll probably miss the feel you got from the original when you pushed on the control stick and made Mario tiptoe for the first time. That is something I will miss.
I guess I prefer remakes if done right. As a lot of the time the ports suck or are badly emulated.
In the case of NES Classics, they did these as well as they can. I love them. The original NES game emulated 99% perfect. In these cases, I like the ports. I'm glad they never ported SMB to the GBA as a Super Mario Advance. There really wasn't much they could do to it. So it was great to get the original game. It makes me feel nostalgic.
It honestly depends. For some games, like the Super Mario Bros. series, I would prefer ports. But for some games (Castlevania 3 nes) I would love to see a complete remake.

Does it please me to pay retail price for a bunch of old games that have been slightly enhanced for a new system? That don't even come on a cartridge? No...

If the original came out as an arcade cabinet, then the later version had damn well better be "port-perfect" as you say, or preferably a good emulation. Robotron 2084 on the Playstation or PS2 is good. Robotron X on the Playstation is crap. But once you have an emulated version of the original out, feel free to release any number of crap "updated" versions.
I don't really care so much about games that originally came out on a console.
