So after commenting on the Genesis Link cable, I got to thinking:
How many systems are there that can actually link?
Personally, I always prefered linking to split-screen. Imagine Goldeneye if you couldn't actually just look over and see the other guy?
So, here are the ones I know about, feel free to add to it:
1. gameboy
2. Lynx
3. Neo geo (cart systen)
4. Neo Geo Pocket
5. Genesis (Zero Tolerance)
6. Playstation (so many owny link games--Motor Toon Grand Prix rocks!)
7. Jaguar
So, that is the ones I am sure of. I have heard stuff about a Saturn link cable, and a few other machines. Anyone wanna chime in, and maybe include games that use links if you know them?

Dreamcast was linkable, but i only F355 challenge used it.
Game Gear (same way as the other handhelds)
And the saturn was definately linkable- at least 2 games used it: Doom and wipeout.
And of course the PS2

Can Xbox and PS2 actually Link, or do they need a network for it to work?

So, whats the coolest Linkable game you have played?
I had two playstations from the get-go, and I bought two copies of every linkable game. Motor Toon Grand Prix was cool. As you progressed in the game, it unlocked new linkable games within it. There was the racing game itself, plus a kick-ass 3D Battleship game, and a few others. Another one I played a lot was Command & Conquer on the Playstation. And the sequel, Red Alert. Any other favs?

All you need is a crossover cable. You don't need a hub or a router unless you want to link more than 2 at a time. Some PS2 games used the I-link port to connect before the network adaptor came out.

Nintendo's Pokemon Mini handheld has an IR port for limited multiplayer features.
And as far as I know, the Turbo Express has a link port, though I don't know how many games worked with it.
Newly discoverd....Sega Tetris(Japan) for Dreamcast is actually linkable :)
