Here's what I found so far:

The Simpsons: Hit and Run (PC)
(Play on Thanksgiving)

Simpson's Road Rage (PS2)
(Hold L1 + R1 and press Triangle(2), Circle(2) at the options menu. A sound will confirm correct code entry. Select any character to play as Marge in a pilgrim dress. Alternately, set the system date to the third Thursday in November.)

Madden 2002 (Xbox)
(Play on Thanksgiving)

This isn't a very popular game, but The Incredible Machine 3.0 for the PC has extra items to use in your machines depending on the holiday. Turkeys, Leprechauns, Cupids, and so on.
