Sometimes I play 1 player games with another person, alternate players every 2 stages to see how good at the game we really are.

Yeah you guessed right.

On cable, it's way more stable than that Kaillera server used on Arcade emulators. Never had a lagging game on it yet.

Basically just get ZSNES then get the program Zbattle.

I've played on Zbattle a couple times in the past but not recently. Zbattle server goes down a lot. I think I just went by E.
