Donkey Kong Country 3, in Wrinkly's Save Cave, the Super Mario 64 theme tune is playing and Wrinkly is playing an N64!

Any other games do this, or is this the only one?

I know on Phantasy Star Online Episode 1 and 2 for the Gamecube you can build a "mag" that looks like the SMS , Genesis , dreamcast..... But the game was made by Sonic team so what would you expect ;)

Well, Animal Crossing for the GC has NES consoles in it, and Katamari Damacy for PS2 has something in one of the levels that looks an awful lot like a PC Engine ;)

In TimeSplitters 2 you can play some classic games like Snake etc, although they don't actually feature a specific console.

Plus in Animal Crossing, sometimes you were told to bring back a "GameBoy" to another person in your town...they used both GameBoy and GameBoy Color systems

Oh yeah, Urusei Yatsura Dear My Friends for Mega CD has a little tiger-striped console that takes megadrive carts, and has a saturn-lloking controller. Might eb a 6-button though. the games are interesting, one is like the bonus stage in flicky, one is kinda defender-ish.

Im pretty sure in Pokemon silver you could have each Nintendo Console( one at a time and no VB :( )

In Megaman Battle Network, I believe you and some other people have Gamecubes hooked up at home

And doesn't System Shock 2 have a game or two that you can play on your PDA? Swine Sweeper?

In DOA:U there is the 'silver' X-Box hooked up to a TV, if you smash your opponent into it, the TV turns on and the X-box boots up.

In Super Smash Bros. Melee in Luigi's break the targets stage the center that he can grab is a Gamecube.
