Funny. When they were porting Final Fight to the US, Capcom of America complained to the home office that fighting girls was a no-no here. Capcom of Japans solution was to change the storyline so that the girls were actually pre-op transsexuals. She's a man, baby! Supposedly this explains their manish yells in the game. This subtle distinction was obviously lost on American gamers so the SNES version changed the character graphics to guys. For more info check out this fascinating but lengthy FAQ:

The CG art of Mai for King of Fighers: Maximum Impact is definitely up there. And speaking of Mai, I think she's pretty unappealing most of the time, even though she's supposed to be the sexiest King of Fighters character.
