back when i had my 80 or so OPM demo discs, i would sometimes find that the level layout or other factors were changed (not nessecarily improved, but different) when i eventually got the actual game. here are a few i remember:

tekken tag: demo had an audience in the background that would shove you toward the opponent. it was removed from the actual game due to memory limitations.

futurecop l.a.p.d: a small introduction to the first level had you being escorted by the non-mech police to the barricaded battle zone (not included in the actual game). the first level boss was different, and he shot down a recon helicopter in the demo.

ff7: easy one. the boss became an enemy in the actual game. aeris was inserted just to show the player the summoning skill. i don't think you had materia until after you defeat the first boss and set the bomb (i remember barret giving you a tutorial in the game). in the demo, jesse went missing and you couldn't escape the reactor (to prevent you from playing the rest of the game).

Hmm, I remember being selected to be a Beta Tester for Lego Racers when I was like..... 6? 8-)
There was a cool shortcut in the Draculas Castle level that I used every time, but it ws taken out the full version.

That was an awesome game.....

Resident Evil 4's demo doesn't show the police officer being burned at the stake in the village. (At least the Japanese one didn't, can't remember if the U.S. one did or not.)

i think kakuto chojin for xbox had darker lighting than in the game release

Also, the inventory interface was TOTALLY different, you had to equip the knive to use it, and the graphics had a "hazy, filtered" look to it.

PS2 Castlevania (in German OPM Magazin, not sure about the USA Version):
There was one Stage mixed together from many Stages in the real game. You have started at a room, which looks like a Save room, but you can't Save in the Demo.
Much Enemies appears too in rooms and mixed together. In one room where too enemies where in the normal game was no enemie.
The Orbs have different Magic then in the real game.
One Boss waits at the end from the game, Golem. But you must not use an item here, to get him alive.
And maybe some more differents.

GameCube
PAL Demo Disks:
1080° Avalance: Different Bonus items at different courses.

Mario Kart Double Dash!!: The Demo course was in a different Cup, then in the retail game.

Mario Party 6: One Mini game, which don't appear in the final version. Or maybe I have only not found it. Where you must fall down fast and avoid enemies and clouds.

I seem to remember in the Final Fantasy 8 demo that one of the FMVs had a generic soldier in it instead of Quistis... I can't remember for sure, I don't have the demo anymore, so I can't check.

1080 Avalanche had some significant graphical changes from the demo version. I did a 1080 site as a class project and I put up some screens here.

Mace Griffin used to have a Liu-Kang style hat, and a cape.
Not sure if it was in a demo like that,
but all the Marketing (posters, comic book, etc)
had him looking like that.

If you sneak into the simulation mode on the Gran Turismo 2 demo on one of the Pizza Hut PSX demo discs, you'll see that the menu screens looked different (on a personal note, I think it changing them was a good move - imo, the menu screens in the finished game look a lot better).

Since I played the OPM demo of ICO approx 20 times I realized every little changed detail, there were the obvious new rooms, and some areas were changed around (specificaly the windmill scene, its like a whole new puzzle from the demo) Also the shadow creatures were more "full" with smoke in the final version, and some looked different, in the demo they were a bit skimpier.

Bushido Blade 1...it's early video demos on teh Squaresoft Collector's Discs looked NOTHING like the real thing.

The Metal Gear Demo's save data was not compatible with the retail version.

Star Wars Battlefront used a totally different control screen. Also there were differences in the in game menu options.

Since I played the OPM demo of ICO approx 20 times I realized every little changed detail.

Ico's the one that came to mind for me too, for although I didn't play it *quite* that often, both the demo and the game itself were played more than once :)

Shows how much I generally pay attention though - for the life of me I can barely remember which demos I've played, let alone what the differences were if I bought the real deal :)

I always loved how they broke the fourth wall in the Xenogears demo. LOL
