Tempest 2000
Tempest 2000 and...
Tempest 2000. :P
Really it's the best game that doesn't seem dated by a long shot!
Other candidates...
Aliens vs. Predator
Defender 2000
Iron Soldier
Rayman
Good Amiga games that are also on the Jaguar:
Cannon Fodder
Pinball Fantasies

Ok!! Thanks. Since you said Tempest 2000 3 times, I may just get that. :D
EDIT: I believe you just randomly picked some games. I was specifically talking about the games on the link I posted to the Estarland site.

I own every Jaguar game.
Tempest 2000 is easily the most important one to find.
Most people really like AvP, but I think it has aged a lot. I think games like Iron Soldier (or if you have the money, Iron Soldier 2) and Zool 2 are worth it. Zool is one that I seem to be relatively alone on.
Protector SE is great, but pricy. Missile Command 3D is slick. Rayman is just awesome if you haven't already played it. Flip Out is a fun puzzle game. Attack of the Mutant Penguins is totally worth a look. Ultra Vortek is one of the best 2D fighters I've played, although that isn't a big category for me. Cybermorph is worthy if you can get over the now really dated look of it. Val D'Isre is fun, although mostly memorization. NBA Jam TE is practically arcade perfect. Brutal Sports Football is really, really fun. Battlesphere, if you can find it, is REALLY pricy but a great little game. Power Drive Rally is a good overhead racer.
And yes... Tempest 2000 is a MUST have. The only true must have on the system in my opinion.
EDIT: Just saw the eStarland note. I like Zool 2 and Zoop is best on the Jaggy in my opinion, but you've only got three choices there. Zero 5 is good, but nearly impossibly hard. I have some games at http://www.goatstore.com/ if you'd like to look there also. I would definitely suggest finding Tempest 2000 somewhere, as it is the Jaguar title that makes it totally worth owning a Jaguar.

I'd go for Cannon Fodder and Raiden myself.
Atari Karts is fun but pricey.
Fight for Life is cheap and so awful it's good. The slow-mo & pause options are oddly interesting.

Tempest & Defender 2000, definately.
Rayman is also a must.
Attack of the Mutant Penguins (I liked this game... others didn't, however.)
Alien vs. Predator is okay, I wasn't too impressed with it, however.
and Breakout 2k looked interesting, if you can find a copy. I never could.
I never played any of the JagCD games, so I really can't judge them.

I remember getting my Jaguar for the first time. As I was a computer newbie, I hadn't played Doom yet. I got it on the Jag and it consumed my life. Eventually, I ended up with AvP (awesome game), Cannon Fodder, Cybermorph, Brutal Sports Football, and Wolfenstein 3D. By the time EB told me the CD add-on was delayed AGAIN I gave up and sold it.

Must haves:
Iron Soldier
AvP
Tempest 2000
Personal Faves not on above list:
Attack Of The Mutant Penguins
Hover Strike: Unconquered Lands (if you want to go for broke and get the CD add-on)
Vastly Underrated:
Club Drive
Brutal Sports Football
Doom (it's a surprisingly good console port)
Famidrive-16

Rayman
Zool 2
Only two of three I own I like. Third game is Caveman Games, and I hate it.

I'll add my recommendation of Tempest 2000 to everyone else's. If you have or are getting a Jaguar, it's the one game you have to have. I also enjoyed Doom (one of the best console versions), AvP, and Wolfenstein 3D. Luckily, I'd never played the PC versions of Doom or W3D before I got my Jag so those games were new to me. Wolfenstein 3D does seem a bit short today. I never liked the CD unit...it never worked right for me. I had to continually fiddle with it to get it to start up. You don't want the Jag if you plan to get a lot of sports titles. They had one decent basketball game and not a realistic one (NBA Jam), no baseball games, a so-so football game...did it ever get a hockey game? I forget.

Raiden is definately a must.
I've played Protector SE and think it is exceptional, only I haven't purchased it yet do to price. Maybe someday I'll take the plunge.
Other titles I enjoy:
Val d'Isere Skiing & Snowboarding
Ruiner Pinball
DOOM
AVP

I would have to say Cybermorph. Good luck though since I've never even seen one on eBay. Talk about RARE! Whew! I mean, GOLLY! Anyone who has that and maybe one other Jaguar game *cough-kasumi-ninja-cough* would be SET FOR LIFE if they were to ever sell them! YOWZA!

Sorry for this offtopic post.. but is this estarland.com site reliable? I have never heard of them before and they have a few things I wouldn't mind picking up.

Most people really like AvP, but I think it has aged a lot.
Not to mention that the far superior full-3D version (dunno if you could classify it a "remake...") is incredibly easy to find on eBay or any secondhand software shop...

I liked Tempest 2000 most of course, also I loved Cybermorph, Evolution Dino Dudes, Iron Soldier 1 and 2, Battlemorph (CD-only). Think that was it for games I still play once a while and which are Jag-only.

Of the ones I own (I do not have T2K, but I have T3K on NUON :) ) I really loved AvP, damn good game. Eventhough they are on countless other systems, I still loved and enjoyed Rayman and Theme Park. Power Drive Rally is a personal favorite of mine, and Zool2 is a faril good platformer as well.

Tempest 2k was great, helped that the soundtrack rocked too.

AvP i find to have aged a lot also. Was an amazing game back in when it was first released, but playing it now for the first time will probably have you thinking it kinda "Blah."
Tempest 2000 as everyone else said is the single best(and unique to the Jaguar) game on the system. As a second, I'd probably go Atari Karts(A personal friend of mine was one of the developers on that one) or Pinball Fantasies.

The fully 3D one wasn't really related to the Jaguar version in any way other than name. The two are VASTLY different gameplay experiences. AvP for the Jag was very unique for not having levels and for the most part, not giving you much in the way of ammo or weapons. I would actually compare it most to Doom 3. AvP for the PC, as I recall, was more like a Halo-esqe style shooter.
