I'm sure many of us do. But, what games, and for what systems? For me:
-Street Fighter Alpha 3-GBA, PSone, and the Dreamcast
-The King of Fighters Dream Match 99 for the Dreamcast. U.S and JPN versions.
-The King of Fighters Evolution 99 for the Dreamcast. U.S and JPN versions.
-Marvel Vs Capcom 2 for the PS2 and the Dreamcast. JPN and Korean versions.
-Street Fighter III:3rd Strike for the PS2. JPN and Korean(with the Hyper SFII set) versions.

Um lots, more then im willing to admit :embarrassed:
what happens is I buy the xbox version of a said game then
a customer trades in a GCN or PS2 version and I think I might as well buy that and see what it runs like in the said console(It helps I get all the games at cost).
a couple are
Nba Jam - Have everyversion on every console
Mortal Kombat - Gen/Snes/PC/Sega CD/SMS/GG
Mortal Kombat II - Gen/Snes/PC/Sat/32X/GB/GG
and so on and so on right up too
Resident Evil 4 - GCN/PS2
GTA 3 -Ps2/PC/Xbox
GTA VC -Ps2/PC/Xbox
GTA SA -Ps2/PC/Xbox
and the list just goes on and on.
I have major spending problems :embarrassed:

I also have too many to want to even think about. Some of the more notable ones:
I'm often known as 'the Dreamcast guy' on these boards, and although I own five different copies of Sonic Adventure for the DC and two of Sonic Adventure 2, I bought the GameCube games, played and beat the games on there. I have never played more than the first level on the Dreamcast :/ Reason? Hell, I don't even know.
I bought a ton of Xbox games that I wanted to play. Then, I got a GameCube, stuck it in my room and now play it 10 times more than my Xbox. Since the Xbox is downstairs and a little out of the way, if I want to play it and I already have it on the Xbox and it is sort of cheap, I'll get it for the GameCube too. I have of had all of the following for both at one point - Midway Arcade Treasures 1, Dead to Rights, Freestyle Street Soccer, Blowout, Soul Calibur II, and at least another five or so that I'm forgetting now on both consoles.
I don't know if this counts, but I got Ms. Pac-Man Maze Madness for the GameBoy Advance as well as the Dreamcast. I played and beat the DC version though, and am working on the same thing now on the GBA. (Different games though, same name.)

thats all I can think of right now might have more.
Soon I will have Chaos Field for Dreamcast and Gamecube

For the most part I don't purposely buy games for multiple systems but there are the odd exceptions:
MK3 - PC, SNES
MK3U - SNES, Genesis
Doom - PC/MAC, SNES, Xbox
Soul Calibur 2 - GCN, Xbox (Still need PS2)
RE-CV - DC, GCN
RE2 - N64, GCN
FF III(VI) - SNES, PSX
FF II(IV) - SNES, PSX
Chrono Trigger - SNES, PSX
Myst - Saturn, 3DO, Mac/PC (Still need Jaguar and PSX)
That's all I can think of.

This is something I try to avoid, but I do have Paperboy on the NES and on MAT1 for Xbox (since they're fairly different and stuff).
Space Invaders: ColecoVision, Famicom, PC Engine, SNES.
I'm not that good at it, but it just seems right to own that classic on every platform.

Detana TwinBee - I have the original PCE HuCard, and it's also included in the Twinbee Deluxue Pack for the Saturn along with Twinbee Yahho!
Lords/Winds of Thunder - I have WoT on PCE and also LoT on the Mega CD so I can play it in the dining room too :)
Cotton/Cotton Original - PCE/PSone, um no idea why I got both of these. Gotta love cute witches though.
I nearly got both Thunder Force Gold Packs, just so I could play TF in the living room. Pointless, as I have TF 3 & 4 for the MD anyway.
EDIT: Thought of another -
Metal Slug - I got the Saturn version ages ago before I got my NeoGeo. Never could get that damn RAM cart to work with the Saturn though, so I've never actually played it :( Ah well, got the original version now anyhow :)

What interests me are the differences that you sometimes get between versions.
Case in point, two of the EA Lord Of The Rings games, Two Towers and Return Of The King. On the GameCube and PS2, they were highly playable, FINISHABLE and enjoyable. I just bought them on the Xbox last week and you would think that these would be the superior versions, as I was assuming. They are, in fact, absolute shit, for lack of a better term. They ramped up the difficulty levels so that the games are practically impossible to complete even on the easiest setting. The graphics are very poor. Incredibly dark and grainy. There is a slight lag between when a button is pressed and the action taken. I don't know what happened with the Xbox ports but Xbox owners got shortchanged HUGE with these titles. The Cube versions kick the living shit out of the Xbox versions.
