Can anyone recommend me some good, lesser known SFC fighting games?

Ranma series is a good start. I think the first one (of 3) made it to the US but slightly changed. I have the first 2 on Jap myself. Pretty balanced, as long as you can figure out the controls :P

Battle Tycoon is rather fun, especially in its character-building Advance Mode.

There are several Ranma 1/2 titles that can be purchased for not much more then a regular SNES cart.

Bastard!.. besides it's interesting name it's got a variety of modes (including team), and is actually quite a good game.

I have the first 2 on Jap myself.The first made it over here in HIGHLY, HIGHLY fucked up / bastardized form, retitled as Street Combat. Worst localization ever? Quite possibly. The second came out here relatively unmolested as Ranma 1/2: Hard Battle. The third (Super Battle) was advertized for an American release but never made it out.

Flash Hiders seemed pretty good to me...Of course, I'm sure it would've been better if I knew what the hell I was doing. ;)

You're talking about Battle Tycoon, aka "Flash Hiders SFX," right? It was a sequel to the original Flash Hiders, which appeared only on the TurboDuo.

I was talking about one on one fighters, but would be interested in sidescrolling beat em ups as well.
