Battle Garegga, Batsugun, and Radiant Silvergun are tops.

On top of those 3, I'd also highly recommend Blastwind, DonPachi, DoDonPachi, Kingdom Grandprix, Shienryu, and Soukyugerentai

Shienryu and Soukyugurentai can never get enough love. One is the pinacle of Raiden-clones (and is so much better than Raiden) and the other is the pinacle of multi-layered shmuppingness. So yea...second those and then third/fourth/whatever everything else already said.
also, Kyukyoku Tiger 2 is damned good and well worth checking out (it's an awesome Raiden clone from Takumi)
I'm going to just go ahead and assume that you already have Galactic Attack/Rayforce/Gunlock/Layer Section for your US saturn and not even bother recommending the awesomeness that is the first part of a taito trilogy of goodness.

All mentioned in this thread are must-haves.

Check the list in the games section on Turn to Vertical (http://www.turn.to/vertical), if you have the urge to turn your telly on it's side for some proper TATE'd vert shmuppery.

Don't forget the Cave love. Donpachi and Dodonpachi. Batsugun for pre-Cave (but made by soon-to-be-Cave people). I personally don't like the Raizing stuff (Soukyu and Battle Garegga) but that's just me. If for some reason you want some sideways, get Hyper Duel (if you can afford it). Game Tengoku is a good vert too!
Follow my site for some scans and info on a bunch of other Saturn shit.

Gun & Frontier is pretty good too - maybe not up there with some of the other titles, play-wise, but still very impressive graphically. MAME it first.

I thought it was ok, but I never really felt compelled to dump $10 on it when it was available locally. In hindsight, I really should have picked it and Metal Black up :(
I also really wish I had picked up the Image Fight/X Multiply disc. The only reason I didn't back then was because Image Fight was too fucking hard and I'd never heard of X Multiply, but now that I've been exposed to the sheer awesomeness/badassity of X Multiply, I'm kicking myself in the ass for not getting it :( (oh shit, Horizontal tangent!)
