Any of you guys have experience converting AVI files so you can watch them on your PSP memory stick?
An anyone tell me how to do that?

Agreed, it's very user friendly.
Also, if you want to rip your DVD's to watch them on your PSP, you'll need DVD Decrypter, there's a link to it from the pspvideo9 website.

I also use winavi, it is fast like crazy. a 700 mb file converted to mp4 in under 40 min.

Has anyone tried Sony's official PSP Media Manager?

I have. Its quick like winavi, but converts to avr(or whatever those are) files. But only works with 2.0 and up.
